2 nectarines, pitted and diced
1 ripe tomato, seeded and diced
¼ cup diced onion
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
¼ teaspoon crushed red pepper flakes, or to taste
salt to taste
1 teaspoon ground cumin
1 teaspoon chili powder
salt and ground black pepper to taste
2 tablespoons olive oil
8 (4 ounce) boneless pork loin chops

Steps:

  • Preheat an outdoor grill for medium-high heat. Lightly oil grate, and set 4 inches from the heat.
  • To make the salsa, place the nectarines, tomato, onion, cilantro, lime juice, and red pepper flakes in a bowl; toss to blend. Season to taste with salt. Cover, and refrigerate 30 minutes to blend flavors.
  • Stir the cumin, chili powder, salt, and pepper together in a small bowl. Place the olive oil in a small bowl. Brush the pork chops with oil, and season both sides evenly with the cumin mixture.

2 teaspoons chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless pork loin chops (4 ounces each and 1/2 inch thick)
1 tablespoon olive oil
1/4 cup salsa
2 tablespoons apricot spreadable fruit
2 cups sliced peeled nectarines or peaches
2 tablespoons minced fresh cilantro
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano

Steps:

  • In a small bowl, combine the first 6 ingredients. Rub over both sides of pork chops. In a large nonstick skillet, cook pork chops in oil over medium-high heat until juices run clear, 5-6 minutes on each side. Olive oil
1 Tbsp paprika
1/2 Tbsp kosher salt
1 tsp granulated garlic
1 tsp onion powder
1/2 tsp rubbed sage
1/2 tsp ground mustard
1/4 tsp ground black pepper
3 nectarines (chopped)
3 cloves garlic (minced)
1 cup chicken stock

Steps:

  • Preheat your oven to 375°F.
  • Combine pork rub ingredients in a small bowl. Rub onto pork chops.
  • Heat a pan over medium high heat and quickly sear on each side, about 2-3 minutes. Transfer the pork chops to a rimmed baking sheet and bake for 8-10 minutes.

1/3 cup sugar
1 tablespoon whole-grain mustard
2 wide strips lemon zest (removed with a vegetable peeler), plus the juice of 1 lemon
2 large nectarines, chopped (about 2 cups)
1 large fennel bulb, cored and sliced 1/4 inch thick
1 red onion, sliced 1/2 inch thick and separated into rings
1 red onion, sliced 1/2 inch thick and separated into rings
3 tablespoons extra-virgin olive oil, plus more for the grill
Kosher salt and freshly ground pepper
1/2 cup roughly chopped fresh parsley
4 boneless center-cut pork loin chops (3/4 to 1 inch thick; about 1 1/2 pounds), trimmed
