Steps:
- Preheat a grill to medium high. Bring the vinegar, sugar, mustard and lemon zest to a simmer in a medium saucepan. Cook, whisking occasionally, until syrupy, about 3 minutes. Add the nectarines and cook until just softened, 3 to 5 minutes; keep warm over low heat.
- Meanwhile, toss the fennel and red onion with the olive oil in a large bowl; season with 1/2 teaspoon salt and a few grinds of pepper. Brush the grill grates with olive oil. Grill the vegetables (with the fennel perpendicular to the grates to keep them from falling into the grill, or use a grill basket), flipping, until marked and crisp-tender, 5 to 7 minutes. Transfer to a large bowl. Add the lemon juice and parsley; toss to combine.
- Season the pork chops with salt and pepper. Brush the grill grates with more olive oil. Grill the pork until marked and just cooked through, about 4 minutes per side. Serve with the nectarines (discard the lemon zest) and the fennel-onion mixture.
Tips:
- Choose the right pork chops: For this recipe, bone-in pork chops work best. They stay moist and juicy during cooking and add extra flavor to the dish.
- Use ripe nectarines: The riper the nectarines, the sweeter and more flavorful the sauce will be. Look for nectarines that are slightly soft to the touch and have a deep orange color.
- Don't overcrowd the pan: When searing the pork chops, make sure to give them enough space in the pan so that they can brown evenly. If you overcrowd the pan, the pork chops will steam instead of sear.
- Cook the pork chops over medium heat: Medium heat is the best temperature for cooking pork chops. It allows them to cook through without overcooking and drying out.
- Baste the pork chops with the sauce: Basting the pork chops with the nectarine sauce while they are cooking helps to keep them moist and flavorful. It also helps to develop a delicious glaze on the outside of the pork chops.
Conclusion:
Pork chops with nectarine sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are juicy and flavorful, and the nectarine sauce is sweet and tangy. This dish is sure to be a hit with your family and friends.
