OVEN PORK CHOPS WITH HOMINY

Oven Pork Chops With Hominy image

The original recipe was from cooks.com. Posted in response to a request in the forums. I rewrote the recipe to clarify the instructions. I would omit the salt as the soup and hominy should provide enough.

Posole (Mexican soup with pork and hominy) image

This recipe was taught to me by my friend Mary, who was raised in Mexico, when she learned that I didn't like Menudo. She adds a whole jalepeno to the recipe, but that's to hot for me. The prep and cook time doesn't include cook time for the pork.

EASY PORK POSOLE

Easy Pork Posole image

Traditionally a long-simmered stew, this Mexican-inspired stew is quick and easy, thanks to canned hominy. Searing the pork loin in the pot before making the stew gives you a great base of flavors so the stew seems as if it indeed simmered all afternoon. Garnish with chopped cilantro and serve with warm tortillas on the side. Yum, yum, yum.

Tips:

  • Choose the right pork chops: Look for bone-in, center-cut pork chops that are about 1 inch thick. These will cook evenly and stay juicy.
  • Season the pork chops well: Pork chops can handle a lot of seasoning, so don't be afraid to use your favorite spices and herbs. A simple combination of salt, pepper, garlic powder, and onion powder is always a good place to start.
  • Sear the pork chops before braising them: Searing the pork chops in a hot skillet before braising them will help to develop flavor and color. Be sure to sear the chops for a few minutes per side, or until they are browned.
  • Use a flavorful braising liquid: The braising liquid is what will give the pork chops their flavor, so be sure to use something flavorful. A good option is a combination of chicken broth, white wine, and herbs. You can also add some vegetables, such as onions, carrots, and celery, to the braising liquid for extra flavor.
  • Cook the pork chops until they are tender: Pork chops should be cooked until they are tender, but not overcooked. The best way to check for doneness is to insert a meat thermometer into the thickest part of the chop. The pork chops are done when the internal temperature reaches 145 degrees Fahrenheit.

Conclusion:

Pork chops with hominy is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are braised in a flavorful liquid until they are tender and juicy, and the hominy adds a slightly sweet and nutty flavor to the dish. Serve the pork chops with your favorite sides, such as mashed potatoes, green beans, or a salad.
