A great dish I created when I had an abundance of cherry tomatoes. My family loves this dish. This recipe can easily stretch for six. Just cook two extra chops. Make sure to reduce liquids before adding pork, so as not to boil them. Pork will finish cooking very quickly, so be careful not to overcook.

4 (1-inch thick) pork chops
salt and ground black pepper to taste
1 ⅔ tablespoons olive oil, divided
½ onion, minced
2 cloves garlic, minced
1 pint cherry tomatoes
1 tablespoon brown sugar
¼ cup bourbon whiskey
¾ cup beef broth
1 tablespoon minced fresh flat-leaf parsley

Steps:

  • Season pork chops with salt and black pepper.

1/2 cup packed dark brown sugar
4 8-to-10-ounce bone-in pork loin chops, trimmed of excess fat
1/2 cup bourbon or apple cider
1/4 cup apple cider vinegar
2 teaspoons Worcestershire sauce
3 cloves garlic, minced
1 tablespoon minced peeled ginger
1 medium onion, cut into 1/2-inch-thick rounds
2 medium beefsteak tomatoes, halved crosswise
1 tablespoon vegetable oil

Steps:

  • Prepare a grill for indirect heat: For gas, preheat to medium high, then turn off the burners on one side and turn the other burners to medium low. For charcoal, once the coals ash over, push them to one side.
  • Whisk 1/4 cup salt, 1/4 cup brown sugar and 3 cups warm water in a large bowl. Add the pork and soak 10 minutes.
