Steps:

  • Season pork chops with salt and pepper on both sides.

¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms

1 large onion , thinly sliced
1 garlic clove , crushed
100g chestnut or button mushrooms , sliced
100ml/3½ fl oz crème fraîche
1 rounded tbsp wholegrain mustard
a good handful of fresh basil

Steps:

  • Heat the oil in a large frying pan. Add the pork and fry for 2 minutes over a high heat. Toss in the onion, garlic and mushrooms and cook for 4-5 minutes, stirring occasionally.

1/4 cup plus 2 teaspoons all-purpose flour, divided
1/2 teaspoon salt
1/4 teaspoon pepper
4 bone-in pork loin chops (1 inch thick), trimmed
2 tablespoons vegetable oil
1/2 pound fresh mushrooms, sliced
2 garlic cloves, minced
1 cup beef broth
1/2 teaspoon dried rosemary, crushed
1/4 cup half-and-half cream
1/4 cup sour cream
1 tablespoon Dijon mustard

Steps:

  • In a large resealable plastic bag, combine 1/4 cup flour, salt and pepper. Add pork chops, one at a time, and shake to coat. In the Burgundy region of France, home of Dijon, pork chops are traditionally served in a sauce made with mustard, cream and white wine, and there are very few pairings that are better. Richard Olney, a prominent food writer and authority on French cooking, sautéed sliced apples and chops and then baked them all together with cream and mustard dribbled on top. I prefer the method here, but you could always fry up some apples and serve them on the side. (For a dish with roots closer to Normandy than Burgundy, make the same recipe but omit the mustard, deglaze the pan with Calvados instead of wine and stir sliced sautéed Granny Smiths into the sauce itself.)

1 shallot, minced
1 tablespoon vegetable oil
1 teaspoon vegetable oil
4 white mushrooms, thinly sliced
1/2 cup dry white wine or 1/2 cup vermouth
1/4 cup heavy cream
1/8 teaspoon fresh thyme or 1 pinch dried thyme
1 teaspoon coarse grain mustard
4 pork chops, 1/2-inch thick

Steps:

  • In a small saucepan cook shallot in 1 tablespoon oil over moderate heat, stirring until softened.
  • Add mushrooms and saute over moderately high heat, stirring, until liquid mushrooms give off is evaporated (approximately 4 minutes).
  • Add wine or vermouth and boil until liquid is reduced to about 2 tablespoons (approximately 12 minutes).
  • Stir in cream, thyme, and salt and pepper to taste and simmer just until sauce is thickened.
  • Stir in mustard and keep sauce warm over very low heat.
  • Pat pork chops dry with paper towels and season with salt and pepper.
  • Heat remaining 1 teaspoon oil in a 10-inch skillet until hot but not smoking and saute chops until golden and just cooked through, 2-3 minutes on each side.
  • Divide chops between 2 plates and spoon sauce over them.
