1 pound sweet potatoes (skin on), scrubbed then cubed into 1-inch cubes (2 large potatoes)
1 pound Yukon gold potatoes (skin on), scrubbed then cubed into 1-inch cubes (2 large potatoes)
2 tablespoons olive oil
5 large garlic cloves, minced
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 5-ounce bone-in center cut pork chops, (½-1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
2-3 tablespoons fresh parsley, chopped for garnish
2 tablespoons Dijon mustard
2 tablespoons whole grain stone ground mustard
2 tablespoons honey
4 cloves of garlic, minced

Steps:

  • Adjust oven rack to the center position. Preheat oven to 450°F.
