OVEN PORK CHOPS WITH HOMINY

Oven Pork Chops With Hominy image

The original recipe was from cooks.com. Posted in response to a request in the forums. I rewrote the recipe to clarify the instructions. I would omit the salt as the soup and hominy should provide enough.

PORK CHOP HOMINY CASSEROLE

Pork Chop Hominy Casserole image

My mom used to make this. I don't know where she got the recipe. My husband and kids don't like hominy (corn's big cousin) but they love this. Mom tried to make it several times, but every time she opened the can of hominy, there were pork and beans inside, so she would say 'Well kids, it's beans again tonight!'

Tips:

  • Choose the right pork chops: Bone-in pork chops will add more flavor to the casserole, but boneless pork chops can also be used.
  • Brown the pork chops before baking: This will help to seal in the juices and give the casserole a richer flavor.
  • Use a variety of vegetables: This will add color, texture, and flavor to the casserole. Some good choices include onions, celery, carrots, and green beans.
  • Don't overcook the casserole: The pork chops should be cooked through, but not dry. A good rule of thumb is to cook the casserole for about 30 minutes per pound of pork chops.
  • Serve the casserole with your favorite sides: Mashed potatoes, rice, or a salad are all good choices.

Conclusion:

Pork chop hominy casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover pork chops. With its combination of tender pork chops, hominy, and vegetables, this casserole is sure to be a hit with the whole family.
