There's nothing like carnitas. Cubes of fragrantly spiced pork are slowly cooked in lard until they're crispy on the outside while at the same time remaining soft and succulent inside. Yield 6

Number Of Ingredients 10

3 pounds boneless pork butt (shoulder)
8 cloves garlic, peeled
¼ cup olive oil
1 orange, juiced, orange parts of peel removed and sliced into thin strips
1 tablespoon kosher salt
2 bay leaves, torn in half
1 teaspoon ground black pepper
1 teaspoon ground cumin
¾ teaspoon ground cinnamon

SLOW COOKER MEXICAN PORK CARNITAS

Slow Cooker Mexican Pork Carnitas image

This is a shredded spin on carnitas. In Spanish, carnitas means "little meats." The traditional Mexican dish is typically made from pork, but can also be made from beef. This is a slow-cooked version of the otherwise braised or slow-roasted techniques. Once shredded, the meat is often served with cilantro, onion, salsa, guacamole, refried beans, and tortillas. Serve over cabbage slaw in a soft tortilla.

Time 1h25m

Yield 4 to 6 servings

Number Of Ingredients 18

2 tablespoons vegetable oil
One 3-pound boneless pork shoulder, cut into 1 1/2-inch cubes
Kosher salt and freshly ground black pepper
2 medium yellow onions, halved and sliced
2 poblano peppers, seeded and ribs removed, sliced
1 tablespoon dried oregano

One 8-ounce jar diced pimientos, not drained

Remove to a plate, add the onions and poblanos and cook, stirring frequently, until softened, about 3 minutes. • Add the lemon-lime soda and orange zest and juice. Return the pork pieces and any liquid that is on the plate to the multi-cooker. Cover and position the vent to the Sealing setting. Remove from the oven, ladle some of the juices from the pot over the carnitas and carefully toss. Serve alongside the warm tortillas with peach salsa, Easy Queso and fresh cilantro leaves.
  • Combine the cheese, the whole can of tomatoes and chiles and the jar of pimientos with their liquid in a saucepan over medium-low heat, stirring occasionally, until the cheese is fully melted, 5 to 7 minutes.

Yield Enough for 8 main course servings, or enough for 24 to 32 tacos

Number Of Ingredients 10

4 pounds fatty pork shoulder, cut into 2-inch pieces
3 cups water
1 medium white onion, thinly sliced
1/2 orange, cut into 2 pieces
1/4 cup pork lard or vegetable oil

1 tablespoon sweetened condensed milk
2 teaspoons dried oregano, preferably Mexican, crumbled

BEST PORK CARNITAS EVER

Best Pork Carnitas Ever image

This is a very simple recipe for the best tasting pork carnies meat I have ever had. I usually plan to make extra and use the left overs in anything from taco salads to bbq pork sandwiches.

Provided by tamshock

Categories     Pork

Time 2h40m

Yield 6 serving(s)

Number Of Ingredients 6

1 pork roast, I prefer the tenderloin, cut into large chunks
1 cup orange juice
1 teaspoon cumin
1 teaspoon garlic powder
salt and pepper
water

Steps:

  • Cut up your pork roast into 1 to 2 inch chunks (Don't trim the fat it will render in final part of cooking) and put it in a large pot. Add the cup of orange juice and your seasonings. Add enough water to just cover the meat (it's ok if it's not completely covered). Bring it to a simmer and let it simmer uncovered for 2 hours. I know you'll be tempted but DO NOT stir or touch the meat during these 2 hours. You should have enough water/juice in the pot that by the end of the 2 hours you will be down to about an inch or less of liquid. When you get to this point turn the heat up to medium high and chop and stir it around until the liquid evaporates and your pork is a mixture of something between chunks and shredded. I like to let it brown up a bit even. That's it, you're done! The best pork ever and the flavor is simple enough that you can do pretty much anything with the meat.

MEXICAN PORK ROAST &/OR CROCKPOT CARNITAS

Mexican Pork Roast &/Or Crockpot Carnitas image

I was fed this (or something like it) by a fantastic Mexican lady a few months ago. I tried to piece together the recipe based on what she told me (in Spanish) was in it- but she gave me no amounts and no specific directions. My kind of cooking! All the ingredients can be adjusted, to taste. You can marinate this and cook it as a roast, or you can cook it in the crockpot with the marinade. If you start out as a roast, you can just throw leftovers in the crock for carnitas the next day (or freeze it and Crock it weeks later!).

Provided by Teresa in CO

Categories     Pork

Time P1DT3h

Yield 5-10 lbs of meat, 15-20 serving(s)

Number Of Ingredients 13

1 pork shoulder, bone-in roast, 3-10 lbs
2 cups orange juice
1/2 cup milk
1 1/2 cups chicken stock (for basting) or 1 1/2 cups beef stock (for basting)
1 teaspoon adobo seasoning (Goya or something similar)
5 -6 garlic cloves (chopped, minced, or jarred)
1 tablespoon red pepper flakes
3 bay leaves
2 tablespoons cumin
1 teaspoon steak seasoning
1 tablespoon salt
1 tablespoon oregano
2 jalapenos, sliced

Steps:

  • If preparing as a roast:.
  • Place roast in a bowl large enough to hold it plus several cups of liquid (marinade).
  • Grind/blend together all ingredients (except jalapenos and pork) in a blender, immersion blender, mini chopper, or food processor. When mixed and well-blended, pour over pork. The marinade should almost cover the pork- if it doesn't, add more OJ and milk until it's almost covered.
  • Cover and marinate the pork in the fridge for 12-24 hours. Turn every few hours.
  • When ready to cook the piggy, preheat oven to 400 degrees.
  • Place pork in a greased (or PAM'd) roasting pan (I sometimes use a roasting rack inside a pan) with the fatty side UP.
  • Bake pork at 400 until the top gets crispy and brown.
  • Once the top has browned, cover the roast with foil and place back in the oven. Depending on how you like to cook your meat, you could lower the temp slightly for a longer cooking time.
  • Baste the roast every 30 minutes or so to help infuse it with deliciousness (optional).
  • Cooking time will vary widely depending on the size of your roast. I usually get a 10-lb roast, which takes 2-3 hours usually to cook.
  • Once your roast is at your ideal temp (145*-160*), take from the oven.
  • If you'd like to serve it as a roast now, let it rest for 15 or 20 minutes and then slice it. It will be fairly tender but should hold together well for slicing.
  • Leftovers freeze well! Just throw any leftovers (including the bone) into the crockpot on low with a few sliced jalapenos, shred with 2 forks, and you'll have carnitas! I serve my carnitas with pan-fried corn tortillas, chopped red onion, cilantro, and a lime wedge.
  • ***If you're planning on starting this in the crockpot for Carnitas, you will not need to add the whole amount of liquids. This roast is very fatty and will create a lot of its own juice. Pour the marinade in to the crock, leaving 3 or 4 inches clear at the top. Add sliced jalapenos (if desired). Cover and cook on low for 6-8 hours until cooked and falling apart. Shred with 2 forks, throw the bone away, and enjoy!***.

1 clove garlic, crushed
3 tablespoons lime juice
1 tablespoon chili powder
½ teaspoon dried oregano
½ teaspoon ground cumin
4 (14.5 ounce) cans chicken broth

It's worth seeking out pork belly for the amazing texture it lends, but if you can't get it, substitute with another pound of shoulder.

Yield 8 servings

Number Of Ingredients 6

3 pounds boneless pork shoulder (Boston butt), cut into 1 1/2-inch pieces
1 pound pork belly, cut into 1-inch pieces
1 cup homemade chicken stock or low-sodium chicken broth
1 tablespoon (heaping) kosher salt
1 teaspoon freshly ground black pepper
Warm corn tortillas, chopped white onion, lime wedges, sliced avocado, dried oregano, chopped cilantro, and shredded cabbage (for serving)

Steps:

  • Place pork shoulder, pork belly, stock, salt, and pepper in a large heavy pot; cover and bring to a boil over medium-low. Reduce heat and simmer until pork is tender and shreds easily, about 2 hours. Uncover; cook 10 minutes to reduce liquid (but not completely). Remove from heat.
  • Transfer half of pork and pan juices to a large skillet, preferably nonstick, and cook over high until liquid evaporates and pork begins to fry in its rendered fat. Fry, stirring occasionally and pressing on pork with spoon to break up, until browned and just beginning to crisp, 10-15 minutes. Most of the pieces should be bite-size with some smaller shredded and super-crisp bits in the mix. Using a slotted spoon, transfer to a paper towel-lined baking sheet. Cover with foil to keep warm and moist. Repeat with remaining pork.
  • Serve carnitas with tortillas, onion, limes, avocado, herbs, and cabbage.
  • Do Ahead
  • Pork can be braised (do not fry) 3 days ahead. Cover and chill.

Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is the best cut for carnitas because it has a good amount of fat, which helps to keep the meat moist and flavorful. It is also a relatively inexpensive cut of meat.
  • Score the pork shoulder: Scoring the pork shoulder before cooking helps the marinade to penetrate the meat and also helps the meat to cook more evenly.
  • Use a flavorful marinade: The marinade is what gives carnitas its distinctive flavor. There are many different recipes for carnitas marinade, but they typically include a combination of citrus juices, spices, and herbs.
  • Cook the pork shoulder until it is fall-apart tender: Carnitas is typically cooked for several hours, until the meat is so tender that it can be easily shredded. This can be done in a slow cooker, Dutch oven, or roasting pan.
  • Serve carnitas with your favorite toppings: Carnitas can be served with a variety of toppings, such as guacamole, salsa, sour cream, cheese, and tortillas.

Conclusion:

Carnitas is a delicious and versatile Mexican dish that can be enjoyed in many different ways. Whether you are serving it as a taco filling, burrito filling, or simply on its own, carnitas is sure to be a hit. So next time you are looking for a flavorful and easy-to-make meal, give carnitas a try!
