**Pork barbecue**, also called **pulled pork**, is a Southern dish that is enjoyed by people of all ages. This dish is typically made with a pork shoulder or butt that is slow-cooked in a smoker or oven until it is fall-off-the-bone tender. The pork is then slathered in a sweet and tangy barbecue sauce and served on a bun with coleslaw and pickles.
There are many different recipes for pork barbecue, but they all share a few common ingredients. These ingredients include:
* **Pork shoulder or butt:** This is the cut of pork that is most commonly used for pulled pork. It is a tough cut of meat, but it becomes tender when it is slow-cooked.
* **Barbecue sauce:** This is the sauce that gives pulled pork its flavor. Barbecue sauce can be made with a variety of ingredients, but it typically includes tomatoes, vinegar, sugar, and spices.
* **Coleslaw:** This is a side dish that is often served with pulled pork. Coleslaw is made with shredded cabbage, carrots, and mayonnaise.
* **Pickles:** Pickles are another side dish that is often served with pulled pork. Pickles add a tangy flavor to the dish.
Pork barbecue is a delicious and versatile dish that can be enjoyed in a variety of ways. It can be served on a bun, in a sandwich, or on a salad. It can also be used as a filling for tacos or burritos. No matter how you serve it, pork barbecue is sure to be a hit.

Steps:
- Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
- Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
- Sprinkle a bit of sesame seeds on top, then serve with rice!
- Enjoy!

Steps:
- For the BBQ sauce: Combine the ketchup, mustard, brown sugar, garlic, cider vinegar, Worcestershire, Cajun seasoning and 1/2 cup water in a small saucepan over medium heat. Bring to a boil, stirring until ingredients are completely incorporated. Reduce the heat to low and simmer gently until the flavors have melded and sauce has thickened enough to coat the back of a spoon, 30 to 40 minutes.
- Remove from the heat and let cool to room temperature. If not using right away, cover and refrigerate for up to 2 weeks.
- For the pulled pork: Preheat the oven to 275 degrees F.
- Spread out the onions and garlic in an even layer in a roasting pan and pour in the chicken stock. Combine the Cajun seasoning and brown sugar in a small bowl. Pat the pork shoulder dry with paper towels and then rub all over with the spice mixture. Set the pork on top of the onions and garlic and cover the roasting pan with foil. Transfer to the oven and cook until the pork is fork tender, 6 to 8 hours.
- Remove the pork to a cutting board to cool. Strain the cooking liquid through a fine-mesh sieve and reserve.
- If the pork has a bone, remove and discard it. With two forks, shred the meat into bite-size pieces, discarding any large pieces of fat. Return the shredded meat to the roasting pan. Add 2 cups of the BBQ sauce and a bit of the reserved cooking liquid if too dry.
- For the coleslaw: Combine the red and green cabbage, carrots and red onions in a large bowl. Whisk together the mayonnaise, cider vinegar, sugar, and some salt and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine. Taste for seasoning; adjust with more salt, pepper or sugar as needed.
- Serve the pulled pork on buns topped with coleslaw.

SLOW COOKER BBQ PULLED PORK
If you've spent any time on Pinterest or food blogs, you've likely come across a recipe for three-ingredient barbecue pulled pork that can be made in the slow cooker. Methods and ingredients vary, but the recipe almost always calls for boneless pork shoulder, some sort of dark cola (usually Dr Pepper or root beer) and barbecue sauce. Dubious? We were too, so we asked the members of our NYT Cooking Community Facebook page if anyone had ever made it and if they liked it. We received more than 150 very opinionated responses. Many readers have come up with their own clever twists, like using coffee or beer in place of cola, adding onions or chipotles, rubbing the meat with a spice blend and searing the meat before cooking. We tried cooking it a few different ways and found we liked this adaptation best. It calls for a few more ingredients and an extra step or two, but it's got layers of flavor and it's still mostly fuss-free. (You can find the pressure-cooker version of this recipe here.)

Steps:
- In a small bowl, combine the garlic and onion powders, smoked paprika, salt and black pepper. Rub the spice mixture all over the pork. If you have time, cover with plastic wrap and refrigerate for 2 hours or up to overnight. If you don't, no worries; proceed to Step 2.
- Lightly grease the crock of a slow cooker. Heat 2 tablespoons vegetable oil in a large skillet over medium-high. Sear the pork until golden brown on all sides, about 2 minutes each side. Add onion, if using, to the slow cooker. Add the pork on top of the onion. Pour soda over the pork and set the slow cooker to low for 6 to 8 hours, until the meat has collapsed and shreds easily.
- Drain most of the liquid from the slow cooker and shred the meat directly in the pot. Add about 1/2 cup of the barbecue sauce and stir to combine. (At this point, if you like crisp bits in your pulled pork, you can spread the shredded pork on a sheet pan and place under a broiler for a couple minutes then return to the slow cooker.) Taste and add more barbecue sauce, hot sauce, salt or pepper, if desired. Serve with soft rolls and extra sauce on the side.
CHEF JOHN'S PULLED PORK BBQ

Steps:
- Make small holes all over the pork shoulder with a thin sharp knife and stuff in garlic cloves. Rub the meat all over with the Memphis Shake; cover and refrigerate overnight.
- Prepare an outdoor grill with an indirect medium-hot fire with a mix of briquettes and hardwood charcoal in half of the grill. Set grate over coals. Place pork, skin side up, in an aluminum pan with about 1 1/2 cups water on the cooler side of the grate. Toss 1 cup of the soaked and drained wood chips onto the coals and cover the grill, making sure the lid's vents are directly over pork.
- When the coals cool to medium-low heat, preheat a chimney-full of hot briquettes and hardwood charcoal. Whenever smoke stops coming out of the vents, about every hour, add more hot coals and 1 cup of soaked and drained wood chips to the fire. The goal is to maintain a medium-heat, smoky fire (but don't worry if it is hotter when the coals are added and cooler while preheating the coals). Rotate the pork when you add coals so it cooks evenly. Cook the meat until an instant-read thermometer inserted into the thickest part of the pork registers 180 degrees F, about 6 hours.
- Set aside 1 quart of the North Carolina-Style Vinegar BBQ Sauce. Once the pork reaches 180 degrees F, begin mopping the entire surface of the meat every 20 minutes with some of the remaining sauce and the pan drippings. Continue to cook the pork, covering the grill between mopping, until an instant-read thermometer registers 200 degrees F, about 1 to 2 hours more.
- Transfer the pork to a cutting board and let rest for at least 15 minutes. Remove the outer skin and discard. Cut large chunks from the bone and shred, using 2 forks or your fingers, (when cool enough to touch) or chop. Toss with about 1 cup of the reserved barbecue sauce for every 3 cups of meat. Tuck the pork into the soft rolls and serve with pickles.
- Whisk paprika, brown sugar, oregano, garlic, ancho powder, salt, and celery salt in a small bowl. Store in an airtight container in a cool, dry place for up to 2 months.
- Heat the vinegar and sugar in a medium saucepan over medium heat until the sugar dissolves. Off the heat, stir in the ketchup, honey, salt, red pepper, and black pepper.

Steps:
- Mix together pork, barbecue sauce, shallots, flour, chicken stock, soy sauce, oil, and sugar. Chill in refrigerator for at least 6 hours.
- Preheat grill for medium heat and lightly oil the grate. Cook the pork until an instant-read meat thermometer reaches 145 degrees F (63 degrees C). Allow to cool; shred or finely chop the meat.
- Prepare dough for Chinese Steamed Buns (see footnote).
- Shape dough into balls. Roll each out into a circle, (like won-ton wrappers). Put 1 tablespoonful of prepared meat mixture in the center of each circle, and wrap dough around filling. Place seam-side down onto wax paper squares. Let stand until doubled, about 30 minutes.
- Bring water to a boil in wok, and reduce heat to medium; the water should still be boiling. Place steam-plate on a small wire rack in the middle of the wok. Transfer as many buns on wax paper as will comfortably fit onto steam-plate, leaving 1 to 2 inches between the buns. At least 2 inches space should be left between steam-plate and the wok. Cover wok with lid. Steam buns over boiling water for 15 to 20 minutes.
- REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface and produce yellowish "blisters" on bun surfaces. Continue steaming batches of buns until all are cooked.

BBQ PORK TENDERLOIN IN THE CROCK POT
I wanted to make BBQ pork tenderloin in the slow cooker, but not pulled pork. This worked out nicely so I thought I'd post the recipe so I can make it again. Hope you enjoy it too. This was easy to slice, though could have easily been shredded as well. Served with rice to put the extra sauce on, along with a veg (I used peas and carrots). I only cooked 1 pork tenderloin and had lots of sauce leftover so you might only want to double the sauce if you do 3 or more tenderloins I would guess?!?

EASTERN NC PULLED PORK BBQ IN A CROCK POT

Steps:
- Quarter and slice the onion into little arches. Place about half an onion's worth in the crock pot as to line the bottom.
- Place the whole pork shoulder into the crock-pot. Take just a small amount of sauce to dampen the shoulder.
- Cover with a generous coating of spice rub, if desired.
- Top with remaining onion slices. Take 75% of the sauce and pour it around the pork shoulder. Then pour the white and cider vinegars around the pork.
- Cover and cook on low for 8-12 hours.
- When cooking is complete, remove cover and then carefully pull the bone out of the pork shoulder (BE CAREFUL! IT WILL BE HOT!).
- Carefully remove the meat and half of the onions from the crock-pot and put into a large bowl, leaving behind as much of the cooked vinegar solution behind as possible. A slotted spoon may be needed.
- Then with two forks (or your hands once the meat has cooled a little, if you are so inclined), "pull" (shred) the meat.
- Pour in most of the remaining, "uncooked" sauce, saving a little to add to BBQ sandwiches as desired. (Personally, I prefer using Texas Pete on my sandwiches.).
- Serve as sandwich or BBQ plate.
- Enjoy!
Tips:
- Choose the right cut of pork: Pork shoulder (also known as pork butt) is the best cut for pulled pork because it is fatty and flavorful. It will also hold up well to the long cooking time.
- Use a good quality rub: The rub is what gives pulled pork its flavor, so it's important to use a good quality one. Look for rubs that contain a variety of spices, including salt, pepper, garlic, and paprika.
- Cook the pork low and slow: Pulled pork is best cooked low and slow, so that the meat has time to become tender and fall apart. Cook the pork at a temperature of 225 degrees Fahrenheit for 8-10 hours, or until the internal temperature reaches 200 degrees Fahrenheit.
- Use a smoker or grill: Pulled pork can be cooked in a smoker or on a grill. If you're using a smoker, use a wood that will impart a smoky flavor to the pork, such as hickory or mesquite. If you're using a grill, use indirect heat and place a pan of water under the pork to keep it moist.
- Let the pork rest before serving: Once the pork is cooked, let it rest for at least 30 minutes before pulling it apart. This will allow the juices to redistribute throughout the meat and make it more tender.
Conclusion:
Pulled pork is a delicious and versatile dish that can be enjoyed by people of all ages. It is perfect for parties, picnics, and potlucks. With a little planning and effort, you can easily make pulled pork at home. So what are you waiting for? Fire up your smoker or grill and get started!
