This recipe is a delicious use of wild rice. Just be sure to season your ground pork if you don't buy it preseasoned (usually labeled as pork sausage). Fresh Italian sausage can also be used, just cut open the casing. Works great prepared a day ahead and re-heated for 20 minutes at serving time.

  • Use high-quality ingredients: The better the ingredients, the better the casserole will be. Look for fresh, organic pork and wild rice, and use a flavorful broth.
  • Brown the pork before adding it to the casserole: This will help to develop its flavor and prevent it from drying out.
  • Use a variety of vegetables: This will add flavor, color, and texture to the casserole. Some good options include carrots, celery, onions, mushrooms, and bell peppers.
  • Season the casserole well: Use a combination of salt, pepper, garlic powder, onion powder, and dried thyme to taste.
  • Cook the casserole until the rice is tender: This will usually take about 45 minutes. If the casserole starts to dry out, add a little more broth.
  • Let the casserole rest before serving: This will help the flavors to meld and the casserole to set up.

With its combination of tender pork, fluffy wild rice, and savory vegetables, this casserole is sure to be a hit with your family and friends.
