1 teaspoon pepper
1 teaspoon kosher salt
1 cup bread crumbs
¼ cup shredded parmesan cheese
1 teaspoon dried parsley
1 teaspoon garlic powder

  • Take a golf ball-size amount of the chicken mixture and pat it out flat in your palm. Place a stuffed cherry pepper in the center and wrap the chicken mixture around it until completely covered, rolling into a ball. Repeat with the remaining cherry peppers.

  • Preheat the oven to 450°F (230°C).
  • Prepare for frying: Add the bread crumbs to a medium bowl with the Parmesan, dried parsley, garlic powder, and salt. Beat the eggs in a separate medium bowl. Add the flour to another medium bowl.
  • Toss a chicken meatball in the flour, then coat in the eggs, then roll in the bread crumbs. Repeat with remaining meatballs.
  • Heat a large pan with ¼ inch (6 ml) of canola oil over medium-high heat until the oil reaches 400°F (200˚C).
  • Working in batches, fry the chicken meatballs for 1-2 minutes on each side, or until light golden brown. Once finished, blot dry with paper towels and transfer to a greased baking sheet.
  • Dollop 1 tablespoon of marinara sauce on each ball, then top with a piece of mozzarella cheese.
  • Bake for 8 minutes, or until meatballs are cooked through with an internal temperature of 165°F (75˚C).
  • Sprinkle with parsley and serve.

PARMESAN AND POPPY SEED LOLLIPOPS

Parmesan and Poppy Seed Lollipops image

Put away those toasted nuts and chips! Canapes have reached a whole new dimension.

Provided by Lorraine Pascale

Time 20m

Yield 10 lollipops

Number Of Ingredients 4

Butter, for greasing
1 1/4 cup/3oz/80g Parmesan cheese, finely grated
1 tsp poppy seeds
1 tsp sesame seeds

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line two large baking sheets with parchment paper and grease.
  • Toss the cheese and seeds together in a small bowl. Sit a 3 1/2in (9cm) ring or cookie cutter on one of the baking sheets and sprinkle a small handful of the cheese mixture into it, in a thin layer. Carefully lift the ring off to reveal a neat-edged disk of Parmesan and lay a lollipop stick on top, with the tip of the stick touching the middle of the disk. Repeat with the remaining cheese and sticks to make 10 in total (leaving about 1 1/4in/3cm spaces between them to allow for any spreading during cooking).
  • You should have a little Parmesan left over, so use it to cover up the part of the lollipop stick resting on the disk.
  • Bake in the oven for 5 minutes, swapping to a different shelf halfway through. The cheese should be lightly golden and bubbling.
  • Remove from the oven and slide the paper off the baking sheets and onto a rack to help speed up cooling. Let cool for 1 to 2 minutes until the lollipops have become crisp. Very carefully remove each one with a spatula. I like to serve these stuck upright into a box with holes in the top.
