PARTY POPCORN

Party Popcorn image

This is a very speedy, almost comedically so, party-eat that is also, obligingly, rather thrifty to make. It's really quite zingy and packed with flavor and might alarm any passing child expecting more regular sugary fare. I find that it's hugely popular, which is why I make a substantial batch of it.

Provided by Nigella Lawson : Food Network

Time 10m

Yield 12 cups

Number Of Ingredients 8

2 tablespoons wok oil
1 cup (un-popped) popcorn maize
1/2 stick butter
2 teaspoons ground cinnamon
2 teaspoons ground cumin
2 teaspoons ground paprika
4 teaspoons table salt
4 teaspoons sugar

Steps:

  • Put the wok oil into the biggest pan you have with a lid over high heat, add the popcorn and quickly put on the lid. Let the popcorn pop, shaking the pan every now and then to keep the kernels moving. You will hear it but don't be tempted to look, unless you want to get shot at, and once it has stopped popping - a couple of minutes or so - take it off the heat.
  • Melt the butter with the spices in another pan and then pour it over the popcorn and put everything into a large paper carrier bag/shopper. Shake, shake and shake the bag again to mix the popcorn and get it thoroughly coated in the spicy butter.
  • Arrange in several party bowls.

Tips:

  • Choose the right popcorn. Use a popcorn that pops up light and fluffy, such as a white or yellow popcorn.
  • Make sure your popcorn is fresh. Stale popcorn will not pop as well and will be less flavorful.
  • Pop your popcorn in a large pot or pan. This will help to ensure that the popcorn pops evenly.
  • Don't overcrowd the pot or pan. If you overcrowd the pot or pan, the popcorn will not pop properly.
  • Keep the pot or pan covered while the popcorn is popping. This will help to trap the heat and ensure that the popcorn pops evenly.
  • Once the popcorn has finished popping, remove it from the heat and let it cool. This will help to prevent the popcorn from becoming tough.
  • Add your favorite seasonings and mix-ins. You can add a variety of seasonings and mix-ins to your popcorn, such as butter, salt, pepper, garlic powder, onion powder, chili powder, or grated Parmesan cheese.
  • Store your popcorn in an airtight container. This will help to keep the popcorn fresh and prevent it from becoming stale.
