This is my Mother's recipe. She called it poor mans spaghetti, at the end of the month when pantry was low she would put together spinach, and pasta with spices. I added a few ingredients and threw in a pot of stock, dry noodles and all. I made this even easier and still a great price at about $7.00 for 6 servings!

5 c vegetable stock (chicken or beef can be used
12 oz spaghetti or linguini noodles
1 14.5 oz can diced tomatoes w/ peppers and onion
2 Tbsp olive oil
8 oz frozen chopped spinach
4 clove chopped fine garlic
1/2 tsp each dried oregano and basil
1/4 tsp red pepper flakes
pinch of pepper
1/4 c parmesan cheese

Steps:

  • 1. Add vegetable stock and tomatoes in juice to large pot, turn heat to high. Break up pasta and add to pot. Add rest of ingredients stir and bring to rapid boil with lid on. Make sure all ingredients or covered by liquid.
  • 2. Remove lid stir and turn heat down to med. Continue boiling stirring every few minutes for about 20 minutes or until pasta is cooked. Serve with more parmesan cheese and fresh italian bread.
  • 3. If you cant find tomatoes with onion and pepper. Use can chopped tomatoes and add one medium chopped onions. Or veggie of choice.

1 small onion, chopped
1 lb spaghetti noodles
3 (10 ounce) cans tomato soup

Steps:

  • 1. Brown hamburger and onion. Season to taste.
  • 2. Add tomato soup and 1 can of water.
  • 3. Cover and simmer while cooking spaghetti.
  • 4. Cook spaghetti according to package directions.

1/4 cup olive oil

  • Bring large pot of water and 2 tablespoons kosher salt to a boil.

1 block Colby Jack cheese
1 3/4 cups tomato juice
2 1/2 Tablespoons seasoning salt

Meanwhile, in a small 1-qt. saucepan or skillet melt the butter over low heat; when melted add the minced garlic and cook for 1 minute, stirring constantly so it doesn't brown. 1 pound ditalini pasta
4 (4 ounce) cans tomato sauce (such as Hunt's®)
1 (15 ounce) can cannellini beans
1 (15 ounce) can kidney beans
1 (15 ounce) can black-eyed peas
1 ½ cups frozen green peas
1 (15.25 ounce) can whole kernel corn
1 large potato, diced
2 carrots, diced
1 onion, diced
1 small head of garlic, peeled and minced
1 teaspoon chopped fresh parsley, or to taste
1 pinch Italian seasoning
1 pinch salt and ground black pepper
1 teaspoon extra-virgin olive oil
