1 pound cellentani pasta ((may sub rigatoni, penne or macaroni))
4 tablespoons butter
1/4 cup all-purpose flour
3 cups milk
1 12 oz. can evaporated milk
1 tablespoon cornstarch
1 tablespoon Dijon mustard
1 tablespoon chicken bouillon
1 tsp EACH onion pwdr, garlic pwdr, dried parsley, salt
1/2 teaspoon pepper
1/4-1/2 teaspoon red pepper flakes ((optional))
4 cups freshly grated sharp cheddar cheese
6-8 slices provolone cheese
1 cup sour cream
1 cup freshly grated Parmesan cheese
3/4 cup panko breadcrumbs
2 tablespoon butter
1 tablespoon extra virgin olive oil

Steps:

  • Cook pasta just until al dente according to package directions - don't overcook! Strain and rinse with cold water.
  • Preheat oven to 350 degrees F. Lightly grease a 9x13 baking dish. Set aside.
  • Melt 4 tablespoons butter in a large skillet over medium heat then whisk in flour. Cook, while stirring for 2 minutes. Turn heat to low then gradually whisk in milk. Whisk cornstarch into evaporated milk and gradually add to skillet followed by Dijon mustard and all remaining spices/seasonings.
  • Bring to a boil, whisking constantly then reduce heat to medium and simmer, whisking occasionally until thickened (but not overly thick). Remove from heat and whisk in sharp cheese until melted. Add pasta and toss until evenly coated (it will seem like a lot of extra sauce which is a good thing).
  • Pour half of the macaroni and cheese into prepared baking dish. Layer macaroni evenly with provolone cheese followed by an even layer of sour cream. Pour remaining macaroni and cheese over sour cream and spread into an even layer. Sprinkle with 1 cup Parmesan cheese (or more to taste).
  • Panko topping (optional): Melt butter in olive oil over medium heat in a medium skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over macaroni and cheese.
  • Bake 25-30 minutes or until bubbly and inside provolone is melted. If not topping with panko, broil until Parmesan is golden. Cool 10 minutes to set before serving.

¼ cup flour
1 ½ cups milk
1 cup light cream (about 10-12% MF)
½ teaspoon dry mustard powder
1 teaspoon onion powder
salt & pepper to taste
1 can condensed cheddar cheese soup (optional 10.75 ounces)
4 cups sharp cheddar (divided)
½ cup fresh parmesan cheese

Steps:

  • Preheat oven to 425°F.
  • Cook macaroni al dente (firm) according to package directions. Drain and run under cold water.
  • Melt butter over medium heat in a large saucepan. Whisk in flour and let cook 2 minutes while stirring. Slowly whisk in milk, cream, mustard powder, onion powder, salt & pepper to taste. Cook over medium heat while stirring until thickened.

It is called Poor Man's Casserole because almost everyone should have the ingredients in their kitchen! This is a very versatile dish because you can add as little or as much of the ingredients to suit your family.

1 lb hamburger meat
1 small onion, chopped
1 garlic clove
salt and pepper, to taste
1 (8 ounce) can tomato sauce
1 1/2 cups cooked rice
1 (4 ounce) can corn

1/2 lb bacon
8 hard-boiled eggs

Steps:

  • Preheat the oven to 350°F Peel and slice the potatoes about 1/2 inch thick, then cook in salted water just until tender (do not overcook). Drain and run under cold water to stop the cooking.
  • Cut half a pound of your favorite bacon cut into 2 inch pieces setting aside about 3 uncooked slices for top. In a frying pan, cook the balance of the bacon pieces until it just starts to crisp.
  • Slice the boiled eggs width wise about 1/4 inch thick.

salt and pepper
1 teaspoon oregano

Ragu parmesan and romano spaghetti sauce
8 ounces cream cheese
16 ounces sour cream

3 1/2 cups macaroni noodles, raw
2 cups shredded sargento four-cheese Mexican blend cheese
