Steps:
- In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil.
- Cut halibut into 2-3 large pieces (so it cooks faster) and add to water.
- Boil for about 10 minutes or until halibut is nice and flaky.
- In the meantime, melt butter in a pot, but do not boil.
- Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

POOR MAN'S MOCK LOBSTER
Try this recipe for chicken that is marinated and grilled, dipped in butter and tastes amazingly like lobster. My Dad actually got this recipe from a friend of his, and it's too wonderful to keep it a secret! Serve with clarified butter for dipping.

Steps:
- In a saucepan, combine the soy sauce, oil, garlic salt, pepper, brown sugar, mustard powder, ginger and pineapple juice. Bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, then remove from the heat and allow to cool completely. When cooled, place the chicken into a large resealable bag and pour the marinade over it. Press out as much air as you can, seal and refrigerate for at least 2 hours to marinate.
- Preheat a grill for medium-low heat. When hot, lightly oil the grate.
- Place the chicken on the grill and discard the marinade. Cook until chicken juices run clear, 20 to 25 minutes. Turn as needed to keep the chicken from burning.

POOR MAN'S LOBSTER (HADDOCK) W/ MELTED BUTTER
I grew up Catholic, so haddock on Fridays during lent was a tradition. This was one of my favorite ways of having it, and it is so easy. Lobster tail is my favorite food, and although this is not as fantabulous as lobster tail, it will give you that fix when you need it for a lot less $$$! It is so good!

Steps:
- 1. So easy. Mix beer with Old Bay, vinegar, & some salt & pepper in Dutch Oven or other large saucepan. Place haddock over top. Pour about a beer can full of water over top of haddock -- just enough to cover.
- 2. Turn heat to boil & boil covered for 20 minutes over med heat.
- 3. Remove haddock with large spatula & place on serving plate. Squeeze lemon juice over top. Serve with melted cups of butter. (Don't be alarmed if the haddock doesn't look beautiful when you take it out. Inside it's all nice & white & flaky).
- 4. Just as I do w/ lobster tail, I like to flake the haddock pieces & then let them sit in my melted butter for a minute as I eat. Enjoy!

VERY POOR MAN'S LOBSTER
This is one delicious, inexpensive meal of fish. It's kind of like the "generic" of haddock; I serve this with potato and cole slaw. Thawing of fish is not included in prep time.

Steps:
- Fill a pot with water (about a gallon).
- Add 1 cup sugar, and bring to a boil.
- Do not ever stir the mixture.
- Add chunks of halibut, do not over crowd.
- They will sink to the bottom, and then rise to the top when they are done.
- It should take just a few minutes.
- Remove with slotted spoon.
- Remember to not stir the mixture.
- Continue until all the halibut is cooked.
- Dip in melted butter and eat!
Tips:
- Choose the right fish: Use a firm, white-fleshed fish like tilapia, cod, or halibut. These fish will hold up well to the poaching process and absorb the flavors of the court bouillon.
- Make a flavorful court bouillon: The court bouillon is what gives the fish its flavor, so make sure to use a variety of aromatics and herbs. Some good options include celery, carrots, onions, garlic, thyme, and bay leaves.
- Poach the fish gently: Bring the court bouillon to a simmer and then add the fish. Cook the fish for 8-10 minutes, or until it is cooked through. Do not boil the fish, as this will make it tough.
- Serve the fish immediately: Once the fish is cooked, serve it immediately with your favorite sides. Some good options include drawn butter, lemon wedges, and tartar sauce.
Conclusion:
Poor man's lobster is a delicious and affordable way to enjoy the flavor of lobster without the high price tag. By following these tips, you can make a perfect poor man's lobster that your family and friends will love.
