This recipe if from the l930's. My Grandmother gave it to my Mother and she gave it to me. Now I am a grandmother and passed it down to my kids. It's really good. You don't have to dirty your mixer for this one, just a big bowl.

Time 1h25m

Number Of Ingredients 12

1 stick butter or margerine
2 c granulated sugar
2 eggs
4 c all purpose flour
1 tsp ground clove
1 tsp ground cinnamon
1 tsp salt
1 Tbsp baking soda
1 large bottle maraschino cherries, drained
1 box raisins
5 c water
1 lb walnuts, broken into pieces

Steps:

  • 1. Boil the raisins in water for 15 minutes; Drain, reserving 2 cups of the water.
  • 2. Grease and flour a large tube pan.
  • 3. In a large bowl, stir together flour, cloves, cinnamon and salt.
  • 4. In a medium bowl, cream the eggs, butter and sugar; add 2 cups of the raisin water and mix well.
  • 5. Add wet ingredients to dry ingredients; mix well.
  • 6. Mix in raisins, cherries, nut and baking soda.
  • 7. Bake at 350 degrees for 1 hour or until knife inserted comes out clean; Cool.

Tips:

  • Use a variety of fruits. This will give your fruitcake a more complex and interesting flavor. Some good choices include raisins, currants, cherries, chopped apples, and pears.
  • Soak the fruits in alcohol overnight. This will help to plump them up and make them more flavorful. You can use any type of alcohol you like, but rum, brandy, or whiskey are all good choices.
  • Use a simple cake batter. A basic pound cake batter is a good choice, but you can also use a yellow cake batter or a white cake batter. Just be sure to use a recipe that doesn't require a lot of rising agents, as this can make the cake too dense.
  • Bake the cake in a slow oven. This will help to prevent the cake from drying out. Bake the cake at 250 degrees Fahrenheit for 2-3 hours, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • Use a simple frosting. A cream cheese frosting or a butter frosting are both good choices.
  • Decorate the cake with your favorite toppings. Some good choices include chopped nuts, dried fruits, or candied fruits.

Conclusion:

Poor man's fruitcake is a delicious and easy-to-make holiday treat. With its simple ingredients and straightforward instructions, this recipe is sure to become a family favorite. So, gather your ingredients and give this classic recipe a try. You won't be disappointed!
