ASIAN SLAW WITH PONZU DRESSING
Recipe posted for play in Culinary Quest. This recipe is from website: http://steamykitchen.com Ponzu is a Japanese "sauce" however I refer to it as both a dressing and sauce. It's much lighter than soy sauce, with a distinctive tangy lemon/orange flavor combined with a savory note. It's a perfect balance of salty, sweet...

Steps:
- 1. Slice the snow peas on the diagonal into thin matchstick-sized pieces.
- 2. For carrots, you can purchase matchstick carrots, or slice them yourself (make sure to use a very sharp chef's knife).
- 3. I cut the cabbage into four wedges. We will only use 1 of the wedges. Then, I shred the cabbage as thinly as possible. To do this, use a vegetable peeler and go along the corner, or use a box grater with large holes or use a sharp knife to shred by hand.
- 4. Now for the fennel, cut the white bulb from the green top. Cut the bulb into quarters and slice one of the quarters as thin as possible using a knife, a vegetable peeler or a mandoline. Save all the leftover fennel for another recipe.
- 5. The dressing ingredients are simple: ponzu, toasted sesame oil, sesame seeds and salt. Add 1/4 cup of ponzu to a bowl, then add the sesame oil and seeds. Season with a big pinch of salt and whisk with fork.
- 6. Pour the dressing over the snow peas, carrots, cabbage and fennel.
- 7. Toss to combine and taste. You can add more ponzu and salt if needed and serve immediately..
ASIAN STYLE SLAW
I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

Steps:
- Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
- Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.

GRILLED SALMON WITH PONZU SAUCE AND VEGETABLE SLAW
Steps:
- Combine orange juice, sake, sugar, soy sauce, lime juice, and red pepper in heavy small saucepan. Bring to a boil over medium-high heat, stirring until sugar dissolves. Boil until mixture is reduced to 1 1/3 cups, about 5 minutes. Combine 2 teaspoons water and cornstarch in small bowl, stirring until cornstarch dissolves. Add cornstarch mixture to ponzu sauce and boil until sauce thickens and is clear, stirring frequently, about 1 minute. (Ponzu sauce can be prepared up to 1 day ahead of time. Cover and refrigerate.)
- Prepare barbecue (medium-high heat). Brush grill with vegetable oil. Brush each salmon fillet with 1 tablespoon ponzu sauce. Grill salmon, skin side up, 3 minutes. Turn salmon fillets and brush each with another 1 tablespoon ponzu sauce. Grill until salmon is just cooked through, about 5 minutes.
- Transfer 1 salmon fillet to each of 6 plates. Top with slaw, dividing equally. Sprinkle with sesame seeds; garnish with lemon wedges and serve.
Tips:
- Slice the cabbage thinly: This will help the slaw absorb the dressing better and make it easier to eat.
- Use a variety of cabbage: For a more complex flavor, try using a mix of green and red cabbage.
- Don't be afraid to add other vegetables: This slaw is a great way to use up leftover vegetables. Try adding shredded carrots, bell peppers, or cucumbers.
- Make the dressing ahead of time: The dressing can be made up to 2 days in advance. This will allow the flavors to meld and develop.
- Serve the slaw chilled: This slaw is best served chilled. This will help the flavors to come together and make the slaw more refreshing.
Conclusion:
This Ponzu Sesame Cabbage Slaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and flavorful side dish, give this slaw a try!
