DRIED FRUIT COMPOTE - POLISH KOMPOT
Polish dried fruit compote is a dessert of stewed fruit eaten year-round in Poland, but it is especially popular in the fall and winter. It uses summer's bounty that has been preserved by drying, and then reconstituted with sugar, water and spices. It is a traditional Christmas Eve (wigilia) dessert and originally was made with 12 dried fruits to represent the 12 apostles. When made thicker, it's wonderful served on toast or ice cream. It's also a great edible gift, but it must be refrigerated. It keeps for about 1 week. Cooking time approximate. Courtesy of Barbara Rolek.

Tips
- Use fresh, ripe fruit: This will make a huge difference in the flavor of your compote. If you can't find fresh fruit, you can use frozen fruit, but make sure to thaw it completely before using.
- Choose a variety of fruits: This will give your compote a more complex flavor. Some good options include apples, pears, plums, apricots, cherries, and peaches.
- Use a good quality wine: The wine you use will also affect the flavor of your compote. Choose a wine that you enjoy drinking and that is not too sweet.
- Simmer the compote over low heat: This will help to preserve the flavor of the fruit and prevent it from becoming too thick.
- Taste the compote as it cooks and adjust the seasonings as needed: You may want to add more sugar, wine, or spices depending on your personal preferences.
Conclusion
Polish Twelve Fruit Compote is a delicious and versatile dessert that can be enjoyed on its own or used as a topping for other desserts. It's also a great way to use up leftover fruit. With a little planning and effort, you can make a delicious and impressive twelve fruit compote that will be enjoyed by everyone.
