KRUPNIK (POLISH MUSHROOM BARLEY SOUP)

Krupnik (Polish Mushroom Barley Soup) image

This is my M-I-l's recipe for Mushroom Barley soup, which is made with dried "cepe" (aka porcini) mushrooms. Other dried mushrooms may be substituted....of course that will change the flavor of the soup. Making it with chicken stock or with a meat bone (instead of water), will give it a richer flavor.

Yield 6-8 serving(s)

Number Of Ingredients 9

1 -1 1/2 ounce dried porcini mushrooms (cepes)

•1/4 teaspoon nutmeg
•2 whole cloves
•1 small cinnamon stick, cracked in half

•20 allspice berries

Add the honey and zest, and heat, stirring, until the honey has completely dissolved. Bring to a boil and immediately remove from heat. 3.Gradually stir in vodka. Serve hot. If serving, cold, let honeyed vodka come to room temperature, transfer to a lidded jar and refrigerate, covered, until ready to serve

  • Soak Barley: Soaking barley overnight or for a few hours softens it and reduces cooking time.
  • Sauté Vegetables: Sautéing vegetables in butter adds depth of flavor and releases their natural sweetness.
  • Use Good Quality Broth: A flavorful broth is key to a delicious soup. Use homemade or high-quality store-bought broth.
  • Add Meat or Sausage: Krupnik can be made with or without meat. If using, brown it before adding to the soup.
  • Cook Barley in Broth: Cook barley in broth until tender, about 30-40 minutes.
  • Season to Taste: Taste the soup and adjust seasonings as needed. Add salt, pepper, and additional spices to your preference.
  • Add Vegetables: Once barley is cooked, add vegetables like carrots, celery, and potatoes. Cook until tender.
  • Add Sour Cream or Yogurt: Just before serving, stir in a dollop of sour cream or yogurt for a rich and tangy flavor.
  • Garnish and Serve: Garnish with fresh herbs like dill or parsley. Serve hot with a side of bread or crackers.
