This is a meal in one. This meal is great on a cold winter night. It even taste better the next day.

1 lb Polish sausage
6 new potatoes
2 lbs cabbage
14 fluid ounces chicken broth
1 onion

Steps:

  • Start by cleaning your vegetables. Cut the cabbage and onion into six lengthwise slices. Cut potatoes crosswise into two pieces.
  • In a large pot layer your ingredients in this order: cabbage, potato and onion.
  • Pour chicken broth over the top of ingredients. Add salt and pepper to taste.
  • The final step is to add the polish sausage on top of the ingredients. Cover and cook over med. heat until desire tenderness.
  • Stir the ingredients so that you do not break the cabbage apart too much. So just be careful in stirring.

This is my intrepertation of our Polish Dinner, I have had and made Pierogies many times, but on our trip to a newly opened store with many Polish Speciality items, we found these Uszka, & Kluski Dumplings, thinking they were similiar to Pierogies, they look like baby Pierogis, so I just created my own dish, and they were really...

1 lb pkg. uszka with meat
1 lb kluski, silesian dumplings
3 lb polish sausage or smoked sausage
1 stick butter
1 bunch green onions, chopped
1 large spanish onion, sliced
1 large green bell pepper, chopped
1 large orange, yellow, or red bell pepper, chopped
3 medium red delicious apples, sliced
2 lb sauerkraut, rinsed
1/2-2/3 c brown sugar, depending on your taste
1 1/2 c apple juice

Steps:

  • 1. Melt butter in a very large skillet, (I USED MY ELECTRIC SKILLET TO FIT IT ALL IN ONE DISH) Add peppers, onions & apples to skillet and allow to brown slightly. Add drained sauerkraut.
  • 2. Cut slits in polish sausage on the diagonal in about 3 inch intervals, add to skillet, then add brown sugar and apple juice,Cover with lid, and lower heat. Allow to simmer.
  • 3. In the mean time add at least 4 quarts of water to a large pot, add 1 tsp salt, and bring to boil, when water comes to boil, add the uszka (meat Noodles) then return to a boil, and boil for 1 minute, they will rise to top, remove with slotted spoon, to a small container, then bring water back to boil, and add the Kluski Dumplings, and boil for 3 to 4 minutes then remove from water, then add both dumplings and noodles to skillet with polish sausage, cover with lid and allow to steam for a few minutes. Then serve on a large platter when sausages are all cooked & everything is hot.
  • 4. This was a great recipe for us, I pride myself in making new and different food items, and weather I made it the traditional way or not, both my husband and I truly enjoyed it. I know I will be making it again real soon. If you have other suggestions for this item please let me know. I love new recipes.
