½ cup pecans
1 cup all-purpose flour, spooned into measuring cup and leveled-off with a knife
½ cup unsweetened coconut flakes
¼ cup old-fashioned rolled oats
Heaping ¼ teaspoon salt
¼ teaspoon baking powder
1 stick unsalted butter, softened
½ cup granulated sugar
¼ cup packed light brown sugar
1 large egg
½ cup raspberry jam

Steps:

  • Preheat the oven to 350°F and adjust the oven rack to the middle position. Line an 8-inch square baking dish with heavy-duty aluminum foil so that it overlaps the sides and spray with nonstick cooking spray.
  • In the bowl of a food processor fitted with the steel blade, place the pecans, flour, coconut, oats, salt, and baking powder. Blend until the mixture has a fine, sand-like texture. Set aside.
  • In the bowl of an electric mixer, beat the butter with the granulated sugar and brown sugar on medium speed until light and creamy, a few minutes. Add the egg and beat until well combined. Add the flour mixture to the butter mixture and beat on low speed until just combined. The dough will be sticky. Place ⅔ of the dough on the bottom of the prepared baking dish, using an offset spatula to spread it into an even layer. (If you don't have an offset spatula, lightly wet your fingers and press the dough into an even layer.) Spread the jam over the surface of the dough, leaving ¼-inch space between the jam and the sides of the baking dish so the bars won't stick to the foil. Pinch off 1-inch clumps of the remaining dough and scatter evenly over top of the jam. The dough won't cover the entire surface; that's okay. Bake for about 35 minutes, until the topping is golden brown.
  • Let the jam bars cool in the baking dish on a rack for about 15 minutes. Using the foil overhang, lift the bars out of the pan and onto the countertop. Pull the foil away from the sides to prevent sticking, and then let sit until completely cool, a few hours. Cut into 16 bars. Cover the bars with foil and store at room temperature for up to two days.
  • Freezer-Friendly Instructions: These can be frozen for up to 2 months. Let the cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove the bars from the container and let them come to room temperature.

3 tablespoons raspberry jam
1 egg wash
1 powdered sugar, to taste

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut the puff pastry into 9 equal squares.
  • Taking one of the squares, place 1 teaspoon of raspberry jam in the center.
  • Brush egg wash on each side of the square.
  • Take each corner and bring them together the seal the jam inside the dough
  • Flip so the pinched side is on the underside. Flatten with the palm of your hand until the patty is about 1-inch thick.
  • Make 8 even cuts around the circle making sure the cuts do not touch in the center.
  • Take 2 of the cut sections and turn them inward to create the heart shape. Repeat with the other 6 sections.
  • Repeat with the remaining pastry squares.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.
  • Serve with a sprinkle of powdered sugar.

1 sheet frozen puff pastry
4 ounces cream cheese, room temperature
1 egg yolk
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon lemon rind
1/2 pint raspberries
1 egg
2 teaspoon water
2 teaspoon sugar

Steps:

  • Thaw the puff pastry and roll the sheets out on a lightly floured surface to make it a little thinner. Chill, covered with plastic wrap to let rest. In a mixer with a paddle attachment, mix the cream cheese, egg yolk, powdered sugar, vanilla extract and lemon rind.
  • Make an egg wash by whisking together the egg and water in a small bowl. Cut the puff pastry into 3-inch squares. Lay a square of pastry on a work surface and paint the edge with egg wash. In the center of the pastry, place 1 tablespoon of cheese filling and 3 raspberries. Paint the edge of a second square of pastry with egg wash, place it on top of the filling and carefully press the edges together to seal them well. Place pockets 1-inch apart on a parchment paper lined sheet pan and keep chilled. Repeat with the remaining pastry.
  • When they're all done, brush the top surface with egg wash and sprinkle with sugar. Bake in a pre heated at 375 degree F oven until golden brown, about 20 to 25 minutes.

⅓ cup raspberry
⅓ cup blueberry
1 tablespoon sugar
½ tablespoon lemon juice
½ teaspoon lemon zest
¼ cup chocolate hazelnut spread
1 banana, sliced
½ green apple, sliced
1 tablespoon brown sugar
⅛ teaspoon cinnamon
1 egg, beaten with 1 tablespoon water or milk
1 cup powdered sugar, sifted
