3 tablespoons all-purpose flour, plus more for work surface
1 box (17.25 ounces, 2 sheets) frozen puff pastry, thawed
1 bag (12 ounces) frozen cherries
1/3 cup granulated sugar
1 tablespoon fresh lemon juice
1 large egg yolk, beaten with 2 teaspoons water (for egg wash)
2 to 3 tablespoons coarse sanding (or granulated) sugar

Tips

  • Use fresh cherries. Fresh cherries will give your turnovers the best flavor. If you can't find fresh cherries, you can use frozen cherries that have been thawed and drained.
  • Pit the cherries. Before you use the cherries in your turnovers, you need to pit them. You can use a cherry pitter or a paring knife to do this.
  • Sweeten the cherries. The cherries in your turnovers will be tart, so you need to sweeten them before you use them. You can do this by adding sugar, honey, or maple syrup to the cherries.
  • Use a good quality puff pastry. The puff pastry is what gives your turnovers their flaky texture. Make sure to use a good quality puff pastry that is made with real butter.
  • Roll the puff pastry out thinly. The puff pastry should be rolled out to a thickness of about 1/8 inch. This will help the turnovers to cook evenly.
  • Fill the turnovers with just enough cherry filling. You don't want to overload the turnovers with filling, or they will be difficult to seal. Aim for about 1 tablespoon of filling per turnover.
  • Seal the turnovers well. The turnovers need to be sealed well so that the filling doesn't leak out. You can do this by pressing the edges of the dough together with a fork.
  • Bake the turnovers at a high temperature. The turnovers should be baked at a high temperature (400 degrees Fahrenheit) so that they cook quickly and the puff pastry puffs up.
  • Let the turnovers cool slightly before serving. The turnovers will be very hot when they come out of the oven. Let them cool for a few minutes before serving so that you don't burn your mouth.

Conclusion

Pocket cherry turnovers are a delicious and easy-to-make treat. They're perfect for breakfast, lunch, or dessert. With just a few simple ingredients, you can create a batch of turnovers that will be enjoyed by everyone. So next time you're looking for a sweet treat, give pocket cherry turnovers a try.
