Yield 6 servings

Number Of Ingredients 10

One 750-ml bottle Moscato wine or other sweet dessert wine
2 cups Simple Syrup, recipe follows
1 cinnamon stick, broken in 1/2
2 tablespoons honey
One 3/4-inch piece fresh ginger, peeled, and finely chopped
1 vanilla bean, split lengthwise
6 small, firm, ripe Anjou pears, peeled

Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan. Bring the mixture to a simmer, stirring occasionally, until the honey has melted. Add the pears and simmer for 15 to 20 minutes, turning occasionally, until the pears are tender. Remove the pears from the liquid and allow to cool.
  • Continue to simmer the liquid until it thickens and is reduced by half, about 15 to 20 minutes. Cool to room temperature. Remove the cinnamon stick halves and the vanilla bean and discard.
  • Place each pear on a small serving plate with a scoop of vanilla ice cream. Drizzle with the honey, ginger and cinnamon syrup. Serve immediately.
  • In a small saucepan, combine the sugar and water over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool.

POACHED PEARS

Poached Pears image

Back in 2012, Mark Bittman and Sam Sifton tackled the task of making up a bountiful meal for 15 at a friend's Brooklyn home. "We wanted to impress our guests without driving ourselves crazy. We decided on sturdy and manageable main courses, but we wanted an eye-popping starter and dessert," Mr. Sifton said. These poached pears in port, paired with an orange, almond and olive oil cake, rose to the occasion. Ready in about 45 minutes, and without a lot of fuss over the stove, it's a great way to end a dinner party.

PEARS POACHED IN BEAUJOLAIS

Pears Poached in Beaujolais image

This is a beautiful dessert. The pears are very gently poached for just 10 minutes in red wine that is infused with peppercorns and cinnamon. Then they cool in the wine. The color is particularly striking, as the pears remain translucent and white on the inside but are infused with red wine on the surface.

6 firm but ripe pears, such as Comice or Bartlett

POACHED PEARS WITH QUINCE PASTE IN PARMESAN CLOAKS

Poached Pears with Quince Paste in Parmesan Cloaks image

Yield Makes 8 to 10 servings

Number Of Ingredients 10

10 firm-ripe Bosc pears with stems (5 lb total)
1/4 cup fresh lemon juice
1 (750-ml) bottle dry white wine
3/4 cup sugar
1 vanilla bean
2 (3- by 1-inch) strips fresh lemon zest
1 lb Spanish or Portuguese quince paste (also called membrillo), cut into 10 equal pieces
parmesan cloaks
Accompaniment: 1 (2-lb) piece Parmigiano-Reggiano for shaving
a 1-inch melon-ball cutter

Steps:

  • Peel pears, leaving stems intact, then core from bottom with melon-ball cutter to create a 2 1/2-inch-deep cavity. Rub pears all over with lemon juice in a large bowl.
  • Bring wine, sugar, vanilla bean, and zest to a boil in a wide 6-quart heavy pot (at least 12 inches in diameter) over moderate heat, stirring until sugar is dissolved. Add pears, arranging them on their sides in 1 layer, along with any lemon juice from bowl (pears will not be covered by liquid), then reduce heat to low and poach pears, covered, turning occasionally, until just tender, 15 to 20 minutes. Carefully transfer pears with a slotted spoon to a 13- by 9-inch baking dish, standing pears upright and reserving liquid in pot.
  • When pears are cool enough to handle, fill cavities with quince paste and stand pears upright in dish again.
  • Boil liquid in pot over high heat until syrupy and reduced to about 3/4 cup, 10 to 15 minutes. Pour syrup over pears and cool, basting occasionally with syrup. Chill, covered, basting occasionally with syrup, until cold, at least 2 hours.
  • Drizzle each pear lightly with syrup and slip a parmesan cloak over stem. Serve with cheese shavings on the side.

Tips:

  • Choose ripe but firm pears for poaching, as they will hold their shape better.
  • Use a variety of pears for different flavors and textures.
  • Poach the pears in a flavorful liquid, such as white wine, red wine, or cider, to enhance their flavor.
  • Add spices, herbs, and citrus zest to the poaching liquid for extra flavor.
  • Poach the pears until they are tender but still hold their shape, about 15-20 minutes.
  • Serve the poached pears warm or cold, with a variety of accompaniments, such as cheese, yogurt, or ice cream.
  • Enjoy the poached pears as a snack, dessert, or part of a meal.
