Steps:
- With a paring knife, lightly score an "X" into bottom of nectarines (this will help with peeling later). Place in a medium pot, along with granulated sugar, vanilla, liqueur, if using, and enough water to cover. Bring to a boil over medium-high. Cover and reduce heat. Simmer until nectarines are easily pierced with a knife, 10 to 14 minutes, depending on size. With a slotted spoon, transfer nectarines to a medium bowl. When cool enough to handle, peel and return to syrup.
- In a medium bowl, using an electric mixer, beat cream and confectioners' sugar on high until stiff peaks form, about 3 minutes. Serve nectarines with some poaching liquid and a dollop of whipped cream.

Poached nectarines can be refrigerated in their juice in an airtight container, up to 1 day.
VACHERIN WITH CHAMOMILE-POACHED NECTARINES
Dainty chamomile flowers garnish our take on vacherin, a classicFrench dessert. The herb also imparts a faintly floral flavor to the poached nectarines that, alongwith tangycreme fraiche, top crisp disks of meringue.

Steps:
- Preheat oven to 200 degrees. Trace a 9-inch circle onto 2 pieces of parchment paper with a pencil. Turn paper over, and place each circle on a baking sheet; set aside.
- Put egg whites and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed until frothy. Beat in sugar, 2 to 3 tablespoons at a time. Gradually raise speed to medium-high; beat until mixture is glossy and stiff peaks form, about 7 minutes.
- Spread the meringue evenly onto the parchment-paper circles on baking sheets using an offset spatula. Bake until meringue is dry and crisp, 2 to 2 1/2 hours. Meringue layers can be stored at room temperature, wrapped tightly in plastic wrap, up to 1 day.
- Spread half the creme fraiche filling over 1 meringue disk. Top with half of the poached nectarines. Place remaining meringue disk on top. Top with remaining filling and nectarines. Garnish with chamomile flowers, if desired.
Tips:
- Choose ripe, firm nectarines: This will ensure that they hold their shape well during poaching.
- Use a heavy-bottomed saucepan: This will help to distribute the heat evenly and prevent the nectarines from sticking to the bottom of the pan.
- Add sugar and spices to the poaching liquid: This will help to flavor the nectarines and make them more delicious.
- Bring the poaching liquid to a simmer before adding the nectarines: This will help to prevent the nectarines from breaking apart.
- Poach the nectarines for 5-10 minutes: This is just long enough to soften the nectarines without making them mushy.
- Serve the poached nectarines warm or chilled: They can be served on their own, with yogurt or ice cream, or used as a topping for pancakes or waffles.
Conclusion:
Poached nectarines are a delicious and versatile dessert that can be enjoyed in many different ways. They are easy to make and can be tailored to your own personal taste. So next time you are looking for a light and refreshing dessert, give poached nectarines a try!
