POACHED HALIBUT WITH EBERHARD

Poached Halibut with Eberhard image

Because poaching requires very little, if any, fat, it's a healthy and delicious way to prepare fish. This recipe, brought to us by chef Eberhard Mueller, of Bayard's in New York City, calls for Atlantic halibut fillets, which are gently simmered in a rich vegetable broth.

Provided by Martha Stewart

Categories     Seafood Recipes

Number Of Ingredients 9

16 baby carrots, peeled and trimmed
1 medium stalk celery, thinly sliced (about 1/2 cup)
1 very small onion, thinly sliced (about 1/2 cup)
1 medium leek, white part only, thinly sliced crosswise, well washed
4 (6-ounce) Atlantic halibut fillets or any firm-fleshed fish, such as black bass or sea bass
Freshly ground pepper
3 cups Tarragon Vegetable Broth
1 teaspoon very finely chopped tarragon, plus sprigs for garnish
1 tablespoon unsalted butter

Steps:

  • Bring a large pot of salted water to a boil. Prepare an ice-water bath; set aside. Blanch carrots in boiling water until tender. Transfer to ice-water bath to cool. Drain well, and set aside. Repeat with celery, onion, and leek.
  • Season fish with salt and pepper. Place tarragon-vegetable broth in a straight-sided skillet just large enough to hold fillets in one layer. Add fish. Place over medium heat, and bring to a boil. Turn fish fillets, and cook 2 minutes more. Remove fish to shallow bowls, and keep warm.
  • Add vegetables to broth, and reheat. Add chopped tarragon, and swirl in the butter. Taste broth, and adjust for seasoning. Ladle broth and vegetables over halibut. Garnish with sprigs of tarragon. Serve immediately.

ERIC'S POACHED HALIBUT IN WARM HERB VINAIGRETTE

Eric's Poached Halibut in Warm Herb Vinaigrette image

Fresh halibut should be ivory-colored, translucent, and shiny. If it has been frozen, it tends to be opaque and very white. Halibut is usually sold as steaks (which poach well) but can also be found as fillets. Chef Eric Ripert shares his recipe for poached halibut.

Provided by Martha Stewart

Categories     Seafood Recipes

Number Of Ingredients 10

1 tablespoon Dijon mustard
1 cup Herb Vinaigrette Eric's Herb Vinaigrette
1 small shallot, peeled and finely diced
3 cups Court Bouillon Eric's Court Bouillon
4 eight-ounce halibut steaks, skin on
Fine sea salt and freshly ground white pepper
1/2 teaspoon chopped fresh tarragon
1 1/2 teaspoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh chives
2 tablespoons fresh chervil

Steps:

  • Place mustard in a medium mixing bowl, and slowly whisk in vinaigrette. Add shallots. Transfer to a small saucepan, and set aside.
  • In a 10-inch saucepan over high heat, bring bouillon to a boil. Season both sides of the halibut with salt and pepper. Add halibut to the pot, and adjust the heat until the liquid simmers. Poach for 5 to 6 minutes, or until a cake tester inserted into the center of the fish meets little resistance or when left in the fillet for 5 seconds, the cake tester is warm to your lip. The halibut will be rare (thinner steaks will poach in less time). Transfer the steaks to a warm plate, and set aside.
  • Add herbs to the vinaigrette, and warm over low heat. Remove the skin from the halibut, and place one steak in the center of each plate. Spoon vinaigrette over and around the fish. Serve immediately.

Provided by Tom Kerridge

Categories     Dinner, Main course, Supper

Time 40m

Number Of Ingredients 11

2 x 170g portions of skinless, boneless halibut fillets
100ml white wine
1 rosemary sprig
1 banana shallot , sliced
300ml chicken stock
500g ripe tomatoes
300g mixed tomatoes , cut into different shapes and sizes
50ml rapeseed oil
2 garlic cloves , thinly sliced
2 spring onions , thinly sliced
50g pre-blanched and podded broad beans (100g pre-podded weight)

Steps:

  • Make the tomato broth the day before. Put the tomatoes and 1/ 2 tbsp flaky salt in a food processor and blitz to a pulp. Pour into a colander lined with a muslin cloth set over a bowl to catch the juices. Fold the cloth over the pulp and put a weight on top to help squeeze out the juices. Put in the fridge overnight to strain. Take the broth out of the fridge 1 hr before serving to bring to room temperature.
  • The next day, toss the mixed tomatoes in a roasting tin with 1/ 2 tbsp flaky salt, the oil and garlic, then spread them out and leave for 1 hr.
  • Next, put the wine, rosemary, shallot, stock and a good pinch of salt in a saucepan. Bring to a simmer, drop in the fish and reduce the heat so the liquid is just bubbling. Gently poach for 8-10 mins, then remove. Freeze the poaching liquor and use as a stock at a later date.
  • Spoon the mixed tomatoes with their oil and garlic, the spring onions and broad beans into two serving bowls. Top with the cooked fish, then pour over the tomato broth.

BUTTER-POACHED HALIBUT

Butter-Poached Halibut image

I like to serve my halibut simply poached in butter, with some fresh wedges of lemon, crunchy salt, and a bit of dill for color. Adapted with permission from "Taste & Technique: Recipes to Elevate Your Home Cooking," by Naomi Pomeroy, © 2016. Published by Ten Speed Press, a division of Penguin Random House, Inc.

Provided by Naomi Pomeroy

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 6

2 pounds unsalted butter
2 teaspoons salt
4 5-oz halibut fillets
Lemon wedges
Crunchy salt
dill

Steps:

  • Clarify the butter: Preheat oven to 350 F. In a 4-quart, oven-safe saucepan, melt butter over medium heat and bring to a simmer, 5-7 minutes. Once white foam (milk solids) begins to form on the top, skim it off with a small ladle or spoon. Reduce heat to medium-low and continue skimming the milk solids until the butter is clear. Pour the clarified butter through a cheesecloth-lined strainer to catch the smaller milk solids. Set aside to cool to 155 F.
  • Poach the fish: Season the fish on all sides with salt, about ¼ teaspoon per fillet. Gently lower the halibut into the clarified butter so all four fillets are submerged. Place the fish in the oven and bake, uncovered, 8 minutes.
  • Assemble the dish: Fish is done when it's firm but not hard to the touch. Use a slotted spoon to remove the fish, drain off the butter, and plate. Serve with lemon wedges, crunchy salt, and dill.

Red wine poached halibut with bacon & mushrooms image

An ultra-indulgent fish dish using fresh halibut, streaky bacon, wild mushrooms and a flavourful sauce made from the simmered-down poaching liquid

Provided by Tom Kerridge

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 11

200ml red wine
100ml fresh chicken stock
3 thyme sprigs
3 black peppercorns
2 x 150g portions halibut
2 rashers streaky bacon
1 tbsp rapeseed oil
1-2 tbsp butter
100g wild mushrooms (or a large king oyster mushroom, cut in half lengthways)
½ lemon , juiced
115g spinach

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the wine, stock, thyme, peppercorns and a pinch of salt in a deep-sided frying pan and bring to just below the boil. Drop in the halibut, turn down the heat and poach for 8 mins or until flaking apart. While the fish is poaching, fry the bacon in a hot frying pan for 2 mins each side until crispy. Remove from the pan, cover with foil and keep warm in the oven.
  • In the same frying pan, heat the oil and 1 tbsp butter until foaming. Add the mushrooms and cook until you get a lovely golden colour. (If using a king oyster mushroom, turn over to get an even colour on both sides.) Once cooked, add the lemon juice to taste and sprinkle with a little salt.
  • Lift the cooked fish from the pan, lay on a plate, cover with foil and keep warm in the oven. Turn the heat up on the poaching liquid, reduce by two-thirds, then pour through a fine sieve.
  • Wash the spinach in cold water and add to the mushrooms. Season, add more butter if needed, and cook for about 3 mins, stirring until wilted. Divide the spinach and mushrooms between two plates and serve the halibut on top. Spoon over the reduced sauce and top with a rasher of crispy bacon.

Tips:

  • Mise en place: As with all cooking, preparation is key. Ensure all ingredients are measured, chopped, and prepped before you begin cooking.
  • Fresh Halibut: Use the freshest halibut available for the best flavor and texture. Look for firm, opaque flesh with a mild, briny aroma.
  • Poaching Liquid: The poaching liquid should be flavorful but not overpowering. Use a good quality white wine, court bouillon, or fish stock as the base.
  • Gently Poach: Bring the poaching liquid to a gentle simmer and maintain it throughout the cooking process. Avoid boiling, as this can toughen the fish.
  • Cooking Time: The cooking time will vary depending on the thickness of the halibut fillets. As a general rule, allow 8-10 minutes per inch of thickness.
  • Flaky Fish: The halibut is cooked when it flakes easily with a fork. Do not overcook, as this will result in dry, tough fish.
  • Eberhard Sauce: Prepare the sauce while the halibut is poaching. This will allow the flavors to meld and develop.
  • Serving: Serve the poached halibut with the Eberhard sauce spooned over it. Accompany with roasted vegetables, steamed rice, or a fresh salad.

Conclusion:

This classic recipe for poached halibut with Eberhard sauce is a testament to the simple yet elegant flavors of French cuisine. The delicate fish is gently poached in a flavorful liquid, resulting in a tender, flaky texture. The rich, creamy Eberhard sauce adds a touch of decadence and umami that perfectly complements the halibut. Whether you are a seasoned chef or a home cook looking to impress your guests, this recipe is sure to delight. Serve it as a main course for a special occasion or a romantic dinner, and enjoy the symphony of flavors that will tantalize your taste buds.
