1 cup Greek yogurt
1 small clove garlic, finely grated (1/4 teaspoon)
1 tablespoon minced fresh chives
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1/2 teaspoon smoked paprika
Pinch of cayenne pepper
2 large eggs
Chive blossoms, for serving (optional)

TURKISH EGGS (CILBIR)

Turkish Eggs (Cilbir) image

At my age I feel like I've seen and done it all, so you can only imagine my shock at finding a new way to do eggs. I would never have thought to pair yogurt with poached eggs and a spicy red pepper butter, but it might be my new favorite breakfast now. Fried eggs also work in this, any way you like 'em. Serve with toasted crusty bread for dipping.

Time 35m

Yield 2

Number Of Ingredients 17

1 cup Greek yogurt, at room temperature
1 clove garlic
¼ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 ½ tablespoons finely chopped fresh dill, or to taste
½ stick unsalted butter
¼ teaspoon ground cumin
½ teaspoon smoked paprika
1 tablespoon Aleppo chili flakes
1 tablespoon chopped fresh parsley
1 tablespoon diced jalapeno pepper
1 pinch salt
2 tablespoons olive oil
1 tablespoon white vinegar, or as needed
4 large eggs
1 pinch sea salt

Steps:

  • Spoon yogurt into a medium bowl. Grate in garlic and mix to combine. Season with salt, pepper, and cayenne. Add dill and mix thoroughly. Set aside at room temperature.
  • Melt butter in a saucepan over medium heat; heat until bubbles begin to burst. Add cumin, paprika, and chili flakes. Stir until color is uniform, then turn off heat and let spices infuse.
  • Grind parsley and jalapeno together in a mortar. Season with salt, drizzle in olive oil, and stir to combine.
  • Fill a large saucepan with 2 to 3 inches of water and bring to a boil. Reduce heat to medium-low, pour in vinegar, and keep the water at a gentle simmer. Crack an egg into a small bowl then gently slip egg into the simmering water, holding the bowl just above the surface of water. Repeat with the remaining eggs. Cook eggs until the whites are firm and the yolks have thickened but are not hard, 2 1/2 to 3 minutes. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place onto a warm plate.
  • Dollop yogurt mixture onto serving plates. Use the back of a spoon to spread yogurt out into a bed for the eggs, carving ridges into the top to catch the oil. Drizzle on some jalapeno oil. Top with eggs and a spoonful or two of the Aleppo butter. Sprinkle sea salt on top.

POACHED EGGS WITH MINT AND YOGURT

Poached Eggs With Mint and Yogurt image

Fresh eggs, whether purchased at the farmers' market or taken from your own home coop, are a great start to any recipe that calls for eggs. This one is adapted from "The Fresh Egg Cookbook" by Jennifer Trainer Thompson and gives the eggs the unlikely partners of plain Greek yogurt and fresh mint. It's served with pita or flatbread. A strange combination? You won't think so once you've started to eat.

Time 1h

Yield 4 servings

Number Of Ingredients 10

1 cup plain Greek yogurt, 2 percent milk fat or whole
1 small garlic clove, finely minced
Salt and freshly ground black pepper
4 tablespoons butter
6 fresh mint leaves
1/2 teaspoon smoked paprika
1/2 teaspoon hot red-pepper flakes
1 tablespoon white vinegar
8 eggs
Toasted pita bread or another flatbread, for serving

Steps:

  • In a small bowl, stir the yogurt and garlic together. Season to taste with salt and pepper and set aside for 30 minutes to 1 hour.
  • When ready to cook, use a large spoon to divide the yogurt on four serving plates, making large dollops. Use the back of a spoon to spread each dollop into a large oval, big enough to hold two eggs.
  • In a saucepan, melt the butter over medium heat until it foams. Add mint, paprika and red pepper flakes and stir until fragrant. Turn off the heat and keep warm.
  • In a large, deep skillet, combine two inches of water and the vinegar. Bring to a simmer. Crack the eggs gently into the water. Simmer until softly cooked, about 3 minutes. Using a slotted spoon, lift eggs out one at a time, holding a paper towel under the spoon to avoid dripping water onto the yogurt. Place two eggs on each plateful of yogurt. Remove mint leaves from the warm spiced butter, then use a spoon to drizzle butter over the eggs. Grind black pepper onto each egg, and serve immediately with hot toasted pita bread.

Tips:

  • For perfectly poached eggs, use fresh eggs at room temperature. This will help them hold their shape better during cooking.
  • Bring the water to a gentle simmer before adding the eggs. If the water is boiling, the eggs will cook too quickly and the whites will become tough.
  • Poach the eggs for 3-4 minutes for a runny yolk, or 4-5 minutes for a firmer yolk.
  • To prevent the eggs from sticking to the bottom of the pan, add a little vinegar or lemon juice to the water.
  • If you don't have a poaching pan, you can use a colander or a slotted spoon to lower the eggs into the water.
  • Once the eggs are poached, transfer them to a bowl of cold water to stop the cooking process.
  • Serve the poached eggs immediately with yogurt, spicy butter, or your favorite toppings.

Conclusion:

Poached eggs are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great source of protein and nutrients. With a few simple tips, you can easily poach eggs at home and enjoy them in a variety of ways.
