Provided by Heather Perine

Categories     Dessert

Time 4h30m

Number Of Ingredients 8

26 Oreo cookies
5 Tablespoons (3/4 stick, 3 ounces) unsalted butter (melted)
1/8 teaspoon kosher salt
16 ounces (2 blocks) cream cheese (softened)
1 1/3 cups (159 g) powdered sugar
1 1/2 cups (360 ml) heavy cream (cold)
3/4 cup caramel (homemade or store-bought)
garnish: pecans, hot fudge, caramel, and whipped cream

Steps:

  • To make the oreo crust: Place cookies in a food processor and pulse until the cookies have become crumbs. You can also turn the cookies into crumbs by placing the cookies into a zip-loc bag and crust them with a rolling pin. Add the melted butter and pinch of salt to the crumbs and pulse to combine. (If making without the food processor, transfer the crumbs to a bowl and stir the sugar and butter in with a fork) Using the bottom of the measuring cup, press the crumbs into the bottom and up the sides of a 9-inch plate. You can also use a 9-inch square pan or 9-inch springform pan. Chill the crust before filling for 30 minutes.
  • To make the filling: Cream the cream cheese and sugar together until light and fluffy. Add the caramel. Cream until smooth.
  • In a separate bowl, whip the cold heavy cream until soft peaks form. Then fold into the caramel filling.
  • Spread the filling into the prepared Oreo crust and chill about 4 hours. Garnish: top with toasted pecan halves, hot fudge, and caramel, whipped cream!

Time 40m

Number Of Ingredients 4

1 box Ritz crackers
1 jar(s) peanut butter
1 jar(s) marshmallow cream
1 pkg chocolate bark

Steps:

  • 1. Spread peanut butter on one Ritz crackers.
  • 2. Then add marshmallow cream to another cracker.
  • 3. Sandwich both together.
  • 4. Place cookies on waxed paper and allow to harden. (I find that if you put the paper or Silpat on a cookie sheet and place it in the freezer for 5 minutes, the cookies harden up faster!).
  • 5. Melt chocolate bark (I like Ghirardelli the best) in a microwave or double boiler.
  • 6. Dip sandwiched cookies into chocolate, covering both sides. After they harden, store in an airtight container.
  • 7. Enjoy!

Tips:

  • For a richer, more decadent flavor, use dark chocolate chips instead of semi-sweet.
  • To make the cookies even more irresistible, add a layer of caramel sauce or chocolate ganache between the cookie and pecan layers.
  • If you don't have a mini springform pan, you can use a regular 9-inch springform pan. Just be sure to adjust the baking time accordingly.
  • These cookies are best served fresh, but they can be stored in an airtight container at room temperature for up to 3 days.
  • To freeze the cookies, wrap them individually in plastic wrap and place them in a freezer-safe bag. They can be frozen for up to 2 months.

Conclusion:

These PMS Turtle Cookie Pies are the perfect treat for any occasion. They're easy to make, delicious, and sure to be a hit with everyone who tries them. So next time you're looking for a special dessert, give these cookies a try. You won't be disappointed!
