Tips:

  • For the best flavor, use ripe, in-season tomatoes. Look for tomatoes that are deep red in color and have no blemishes.
  • If you don't have time to roast the tomatoes, you can use sun-dried tomatoes instead. Just be sure to soak them in warm water for 10 minutes before using.
  • To make the salad ahead of time, prepare the tomatoes and dressing up to 2 days in advance. Store them separately in the refrigerator, and then assemble the salad just before serving.
  • This salad is also delicious with other types of greens, such as arugula, spinach, or kale.
  • If you don't have Parmesan cheese, you can use another hard cheese, such as Romano or Asiago.
  • For a vegan version of this salad, omit the Parmesan cheese and use a balsamic vinegar dressing made with olive oil instead of butter.

Conclusion:

This plum tomato and escarole salad with Parmesan-balsamic dressing is a simple but delicious salad that's perfect for a summer meal. The roasted tomatoes add a smoky, sweet flavor to the salad, while the escarole adds a slightly bitter note. The Parmesan-balsamic dressing ties all the flavors together and makes this salad a real winner.
