PLUM GRAHAM CRACKER CRUMBLE

Plum Graham Cracker Crumble image

As plums bake, their tartness mellows and their juices jelly - just a couple reasons why they do so well in pies, cobblers and this crumble, which is essentially an upside-down graham cracker-crusted pie. If you don't have graham crackers on hand, vanilla wafers will work nicely too, but you'll need to cook a little longer. Be sure to press the graham crackers into a single layer instead of scattering clumps of it over the plums; doing so creates a sturdy but delicate topping that won't drown in a sea of plum juice. Keep this plum crumble simple, or add extra spices like ground ginger, cinnamon or nutmeg.

Time 40m

Yield 6 servings

Number Of Ingredients 7

1 pound/450 grams black plums (about 4 large plums), pitted and chopped into 1/2-inch pieces (about 2 1/2 cups)
5 tablespoons/55 grams packed brown sugar
1/4 cup/35 grams plus 1 tablespoon all-purpose flour
1/2 teaspoon kosher salt
1 sleeve (9 sheets)/145 grams graham crackers, crushed into fine crumbs using a food processor or in a resealable bag using a rolling pin
6 tablespoons/85 grams unsalted butter (3/4 stick), melted
1 teaspoon vanilla extract

Steps:

  • Heat the oven to 350 degrees. To an 8-inch square (or round) baking dish, add the plums, 3 tablespoons brown sugar, 1 tablespoon flour and 1/4 teaspoon salt. Toss everything together to coat and set aside.

  • In a small bowl, combine the butter and vanilla. Using a spoon, mix it into the graham cracker mixture until the crumbs are evenly moist, then spread it over the plums, pressing down with your palms to create an even, compact layer.
  • Bake about 30 minutes or until the crust is golden brown and hardened and plum juice is bubbling up along the edges of the pan. Remove from the oven and let cool for at least 5 minutes. Serve warm or at room temperature.

BAKED PLUM PUDDING

Baked Plum Pudding image

Feel free to use your favorite kind of plum for this pudding recipe, but we recommend prune plums, which have an almond-shaped body that tapers at the end. They're on the smaller side, hold up well, and the pit comes off the flesh easily, all of which makes them especially good for baking.

Yield 6 servings

Number Of Ingredients 8

3/4 cup granulated sugar, plus more for pan
8 plums, cut into thin wedges
3 large eggs
1 1/2 cups half-and-half
2 tablespoons anise liqueur (optional)
2 teaspoons vanilla extract
1/2 cup all-purpose flour
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 400°F. Butter a 2-qt. baking dish, then dust with granulated sugar. Arrange plums in dish.
  • Pulse eggs and remaining 3/4 cup granulated sugar in a food processor to combine. With the motor running, stream in half-and-half, anise liqueur, if using, and vanilla. Add flour and salt and pulse to combine. Let custard sit 10 minutes, then pour over plums.
  • Bake pudding 15 minutes, then reduce oven temperature to 350°F and continue to bake until custard is golden and set, 20-25 minutes longer. Let cool slightly, then dust with powdered sugar.

Tips:

  • To ensure the best flavor and sweetness, choose ripe plums that are slightly soft when gently squeezed.
  • For a crispier topping, use old-fashioned oats or quick-cooking oats. Rolled oats may result in a softer topping.
  • Feel free to adjust the amount of brown sugar and maple syrup based on your desired sweetness level. You can also substitute honey or agave syrup for maple syrup.
  • If you don't have a food processor, you can use a pastry blender or two forks to combine the flour, oats, butter, and sugar until the mixture resembles coarse crumbs.
  • For an extra nutty flavor, toast the oats in a dry skillet over medium heat for 3-4 minutes, stirring constantly, before adding them to the topping mixture.
  • If you prefer a gooier filling, toss the plum slices with a bit of cornstarch before adding them to the baking dish. This will help thicken the juices as they bake.
  • To achieve a golden brown and bubbly topping, keep an eye on the baking crunch and cover it with foil if it starts to brown too quickly.
  • For a delicious variation, try using other stone fruits such as peaches, nectarines, or apricots instead of plums.
  • Serve the plum crunch warm with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent dessert.

Conclusion:

This delectable plum crunch is a symphony of flavors and textures that will tantalize your taste buds. With its juicy plum filling, crispy oat topping, and the perfect balance of sweetness and tartness, this dessert is sure to be a hit at any gathering. Whether you're a seasoned baker or a novice in the kitchen, this recipe is easy to follow and delivers exceptional results every time. So, gather your ingredients, preheat your oven, and embark on a culinary journey that will leave you craving more.
