Number Of Ingredients 8

24 plums, pitted and quartered
¼ cup brown sugar
½ tsp cinnamon
1 cup sugar
1 cup + 3 tbsp flour
1 tsp baking powder
1 egg
1/2 cup melted butter

Steps:

  • Place plums in a shallow, 2 qt, ungreased baking dish. Sprinkle with brown sugar, cinnamon, and 3 tbsp flour. Mix together sugar, 1 cup flour, baking powder, and egg. (This will be lumpy.) Pour over plums. Pour ½ cup melted butter over this. Bake at 375º for 45 minutes.

Tips:

  • Using a food processor or blender to make the streusel topping can save time and effort.
  • For a more intense streusel flavor, toast the oats and nuts before adding them to the mixture.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be sure to grease and flour the baking pan before adding the batter. This will help the cake to release easily from the pan.
  • Bake the cake until a toothpick inserted into the center comes out clean. Overbaking can dry out the cake.
  • Let the cake cool completely before serving. This will allow the flavors to meld and the cake to set.
