Provided by Jeff Mauro, host of Sandwich King

Time 45m

Yield 8 servings

Number Of Ingredients 17

3/4 cup vegetable oil
3 tablespoons all-purpose flour
2 tablespoons ancho chile powder
1 tablespoon chipotle chile powder
2 teaspoons cocoa powder
2 teaspoons dried oregano
2 teaspoons garlic powder
1 teaspoon ground cumin
2 cups low-sodium chicken stock
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
12 yellow corn tortillas
16 ounces Chihuahua or Oaxaca cheese, shredded
4 ounces sharp Cheddar, shredded
4 ounces Monterey Jack cheese, shredded
1/4 cup pickled jalapenos
1/4 cup fresh cilantro, minced

Steps:

  • Heat 1/4 cup of the oil in a medium pot over medium heat. Add the flour and whisk until smooth. Add the ancho chile, chipotle chile, cocoa, oregano, garlic powder and cumin and cook, whisking frequently, until the mixture is thickened slightly and fragrant, about 5 minutes. Add the chicken stock, whisk until smooth and continue to cook until slightly thickened, 2 to 3 minutes. Add the vinegar and season with salt and pepper.
  • Heat the remaining 1/2 cup oil over medium heat in a large skillet until shimmering. Quickly fry each tortilla in the oil, about 5 seconds per side; let drain on paper towels.
  • Preheat the oven to 375 degrees F.
  • Mix the Chihuahua, Cheddar and Monterey Jack cheese together in a bowl. Ladle about a 1/2 cup of the sauce on the bottom of a 9-by-14-inch glass baking dish. Stuff each tortilla with about 1/4 cup of the cheese blend. Roll the tortillas tightly and place seam-side down in the baking dish in 2 identical rows of 6. Cover with the remaining sauce and top with the remaining cheese.
  • Bake until the cheese is bubbly and golden brown, 10 to 15 minutes. Garnish with the pickled jalapeno and fresh cilantro.

ULTIMATE CREAMY CHICKEN ENCHILADAS

Ultimate Creamy Chicken Enchiladas image

This is like a creamy, cheesy, full-of-flavor-in-every-bite dish. The chicken is tender and moist and the tortillas are soft. The enchilada sauce is tangy and pungent and complements the creamy, rich filling so well. This is also great for entertaining because it can be fully assembled ahead of time or even frozen and cooked later. Serve with toppings such as salsa, sour cream, avocado, cilantro, and jalapenos.

Yield 6

Number Of Ingredients 16

1 ¼ pounds skinless, boneless chicken breast halves
2 teaspoons kosher salt, divided
2 teaspoons chili powder, divided
1 ½ teaspoons ground cumin, divided
12 (6 inch) flour tortillas
2 tablespoons butter
1 tablespoon olive oil
1 small onion, finely chopped
1 medium poblano pepper, seeded and chopped
1 small yellow bell pepper, finely chopped
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
½ (8 ounce) package cream cheese
4 ounces sour cream
4 cups shredded Cheddar-Monterey Jack cheese blend, divided
1 cup refried beans
1 (15 ounce) can red enchilada sauce

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place chicken on a large sheet of foil and season with 1 teaspoon salt, 1/2 teaspoon chili powder, and 1/2 teaspoon cumin. Seal the foil around the chicken and place the packet on a rimmed baking sheet.
  • Bake in the preheated oven until tender and no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Shred cooked chicken and set aside. Increase the oven temperature to 375 degrees F (190 degrees C).
  • While chicken cooks, prepare tortillas. Spread both sides of each tortilla lightly with butter. Heat a skillet over medium heat. Toast each tortilla, about 10 seconds on each side, and set aside.
  • Heat oil in a large skillet over medium-high heat. Add onion, poblano pepper, and bell pepper and cook, stirring often, about 2 minutes. Add remaining salt, chili powder, and cumin and cook, stirring frequently, until veggies are very tender, about 5 minutes. Reduce heat to medium-low and stir in tomatoes and cream cheese. Cook, stirring constantly, until cheese has melted. Remove from heat and stir in sour cream and 2 cups Cheddar-Monterey Jack cheese blend.
  • Spread about 1 tablespoon refried beans, if using, in the center of a tortilla. Add about 1/4 cup chicken filling and roll up to seal. Repeat with remaining beans and filling. Pour 1/4 cup sauce in the bottom of 9x13-inch baking dish. Arrange enchiladas in a single layer over the sauce. Pour remaining enchilada sauce over the top and spread to evenly coat. Sprinkle with remaining cheese.
  • Bake in the preheated oven until golden and bubbly, about 30 minutes. Let stand for 10 minutes before serving with desired toppings.

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 9

4 chicken breasts, cooked, boned and diced
1/2 cup chicken broth (I actually use a little more-if you prefer a thinner sauce.)
1/2 cup butter
1 cup chopped onion
1/2 cup chopped green chili
1 (8 ounce) package cream cheese
1 1/2 cups shredded monterey jack cheese
12 flour tortillas
2 cups whipping cream

Steps:

  • Melt butter in pan.
  • Add onions and saute until transparent.
  • Add green chiles and chicken broth.
  • Add cream cheese and stir until melted.
  • Add Chicken.
  • Soften the tortillas by wrapping them in paper towels and heating in the microwave on high for a few seconds.
  • Fill softened flour tortillas;roll and place in greased baking pan (I use a 13x9 pan) in a single layer.
  • Pour whipping cream on top, then cover with the monterey jack cheese.
  • Bake, covered, at 350 degrees for 45 minutes or until bubbly.
  • Top with any extras you would like, we sometimes use picante sauce and chopped black olives.

Tips for Perfect Cheesy Enchiladas:

  • Choose the Right Cheese: Use a blend of Mexican cheese, cheddar cheese, and cream cheese for the best flavor and texture. Mozzarella cheese can also be added for extra gooeyness.
  • Prepare the Enchilada Sauce: Make your own enchilada sauce from scratch using a combination of chili powder, cumin, garlic, onion, and tomatoes. This will give you more control over the flavor and spice level.
  • Soften the Tortillas: Dip the tortillas in hot water or sauce before filling them. This will make them more pliable and prevent them from cracking when you roll them up.
  • Fill the Tortillas Generously: Don't be shy with the filling! Add a generous amount of cheese, meat, and beans to each tortilla. This will ensure that every bite is packed with flavor.
  • Bake Until Golden Brown: Bake the enchiladas in a preheated oven until the cheese is melted and bubbly and the tortillas are golden brown. This will take about 20-30 minutes.
  • Serve with Your Favorite Toppings: Serve the enchiladas with your favorite toppings, such as sour cream, guacamole, salsa, and chopped cilantro. This will add extra flavor and texture to the dish.

Conclusion:

Cheesy enchiladas are a classic Mexican dish that is loved by people of all ages. They are easy to make and can be customized to your liking. With the right ingredients and a little bit of effort, you can create a delicious and satisfying meal that the whole family will enjoy. So next time you are looking for a quick and easy weeknight dinner, give cheesy enchiladas a try. You won't be disappointed!
