Steps:
- Cut off the ends of the plantains and then carefully cut a slit down the length of the skin without cutting into the plantain itself. Using a wooden spoon, pry up the edges of the peel and pull off the skin. Once the peel is removed cut the plantain crosswise into 3 or 4 pieces, each about 2 to 3 inches long.
- Heat the oil in a medium skillet over high heat until it shimmers, about 3 minutes. Add the plantains and fry them until they turn golden on all sides, about 3 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate to drain, then place between 2 sheets of parchment paper. Reduce the heat to medium.
- Flatten the plantains by pressing down on them with a heavy-bottomed pan. Return 1/2 of the flattened plantains to the oil and re-fry until deep golden on both sides, about 4 to 6 minutes. Transfer back to the paper towel-lined plate to drain and repeat with the remaining flattened plantains. Sprinkle with salt and serve immediately.
SWEET AND SPICY PLANTAIN CHIPS

- Add the coconut oil to a large skillet. Add enough vegetable oil to come about a third of the way up the sides of the skillet and heat over medium-high heat until very hot.
- Line a baking sheet with paper towels. Mix together the brown sugar, paprika, cayenne and salt in a small bowl and set aside.
- Add the plantain slices to the oil in batches and fry until golden brown on the outside, about 5 minutes. Remove from the oil and smash to a chip size with a wooden mallet or rolling pin. Return the plantains to the oil in small batches again so they do not stick together and cook for another 3 minutes. - Place the grouper and shrimp in a large bowl. Toss with the lime and orange juice and let stand for 30 minutes. Strain the grouper and shrimp and place in a separate bowl.

- Peel plantain, and diagonally cut into 1/8 inch slices.
- Combine the water and salt in a large bowl, stirring until salt disolves; add plantain slices.
- Cover and let stand 30 minutes.
- Drain plantain slices well, and pat dry.
- Heat 2 tbsp oil in a large skillet; add plantain slices and cook over medium-high heat, stirring constantly, until tender, but not brown.
- Drain well on paper towels.
- Mash each plantain slice with the bottom of a glass cup.

- Make the mojo sauce: put the garlic and onion in a food processor with cumin, lemon zest and juice. Turn processor on and stream in about 1 cup of extra-virgin olive oil and 1/4 cup of water. Turn off processor and reserve.

- For the sandwich: Preheat the oven to 350 degrees F. Have the pork at room temperature. Season it with salt and pepper. Put the roast into a baking pan and roast until the internal temperature reaches 150 degrees F, 40 to 45 minutes. Cover the pork with foil and let it rest for 15 minutes. If not using right away, the roast can be wrapped and refrigerated for up to 2 days. When you are ready to make the sandwich, thinly slice about three-quarters of the pork roast (reserve the remaining one-quarter for Round 2 Recipe Black Bean and Pork Stew).
- Heat a grill pan over medium heat. Spread a thin layer of mustard on both sides of the bread pieces. Place 2 slices ham on the bottom half of each. Top with the sliced pork roast, then the pickles, and then the Swiss cheese. Place the top half of the baguette on top. Brush the grill with canola oil and place the sandwiches, cheese side down, onto the grill. Set a baking sheet on top of the sandwich and weigh it down with a heavy skillet or pot. Cook until the bottom is crisp and the cheese is starting to melt, 4 to 5 minutes. Flip the sandwich over, replace the baking sheet and weight, and cook another 3 to 4 minutes.
- For the plantain chips: In a 2-inch deep cast iron skillet, heat the oil to 350 degrees F.
