- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- In a large bowl, sift together flour, sugar, salt, baking powder, cinnamon and nutmeg. Mix in butter until crumbly. Stir in milk and egg until smooth. Knead lightly, then turn out onto a lightly floured surface. Roll or pat to 1/4 inch thickness. Cut with a doughnut cutter, or use two round biscuit cutters of different sizes.
- Carefully drop doughnuts into hot oil, a few at a time. Do not overcrowd pan or oil may overflow. Fry, turning once, for 3 minutes or until golden. Drain on paper towels.

PLAIN POUND CAKE

- Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/2 by 2 1/2-inch) loaf pans. Line the bottoms with parchment paper.
- Cream the butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time.
- In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
- When the cakes are done, let them cool for 10 minutes. Take them out of the pans, place them on a baking rack and allow them to cool completely. Wrap well, and store in the refrigerator.
BARBADIAN PLAIN CAKE
My grandmother, Gladys Payne Gittens, came here from Barbados about 1906. She read this to me over the phone when I was in law school in 1978. Thanks to my friend Elayne, the Soulful Yenta, to whom I gave a copy, I was able to find this on Mother's Day. It's a great simple pound cake, good with tea.

- Preheat oven to 400 degrees F (205 degrees C). Lightly grease and flour one 9 or 10 inch bundt pan.
- By hand with a spatula cream butter and sugar together until light and fluffy. Add eggs all at once and beat well.
- Sift the flour and the baking powder together. Add to butter mixture along with 1 cup of the milk. Continue to beat well (the batter will be doughy). Add the remaining 1 cup of milk along with the vanilla, and almond extracts. Pour batter into the prepared pan.
- Bake at 400 degrees F (205 degrees C) for 1 hour. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 15 minutes longer.

- Grease and flour pan(s) and set aside. Preheat oven.
- Sift together flour, sugar, salt, baking powder and dry milk into mixer bowl. If using dehydrated eggs (see below), they are added to the dry ingredients here.
- Place the shortening and 1 1/2 cups water in the mixer bowl on top of the dry ingredients. Beat one minute at low speed, scrape down sides, beat 2 minutes longer.
- Combine eggs, 4 1/2 cups water and vanilla. Add slowly to wet mixture while beating at low speed.
- As soon as completely mixed, stop beater, scrape down bowl, then beat at medium speed 3 minutes.
- Pour 1 gallon (about 7 pounds, 7 ounces) of batter into each 18x26 pan.
- Bake thin sheet cakes 26 to 35 minutes, until done. Cool, frost if planned, cut each 6x9.
- Bake 9x13 pans 35 to 45 minutes, until done. Cool, frost if planned, cut each 4x5.
- Variations.
- Sift in 2-4 tablespoons apple pie spice, ginger, etc for a spice cake base.
- Sift in 1 to 1 1/2 cups cocoa and add 2 additional eggs for light chocolate layers.
- To substitute dehydrated egg mix, sift 11 ounces (2 3/4 cup) canned dehydrated egg mix in with dry ingredients. After the shortening is added, beat together vanilla and 4 1/4 quarts water and add as if adding the egg mixture.

- Cinnamon sugar Preheat the oven to 325°F. Brush 2 six-mold donut trays with coconut oil and set aside.
- In a medium bowl, whisk together the sugar, flours, potato starch, arrowroot, baking powder, xanthan gum, salt, and baking soda. Add the coconut oil, applesauce, vanilla, and hot water and continue mixing with a rubber spatula just until the ingredients are combined. Using a melon-baller or tablespoon, drop 2 1/2 tablespoons of batter into each donut mold. Using a toothpick, spread the batter evenly around the mold.
- Bake for 8 minutes, rotate, and continue to bake until the donuts are golden brown, about 7 minutes more. - 1. Preheat oven to 350 degrees F. Using a large bowl add eggs, oil, chia seeds, applesauce, & Splenda. NOTE: Using room temperature eggs creates more volume to your cake batter.
- 2. I used unsweetened applesauce & organic Chia seeds. In a seperate bowl add the almond flour & baking powder, then whisk together to blend.
- 3. Beat until batter is mixed together and well combined.
- 4. Add about half of almond flour to wet ingredients, then beat well to blend. Then add remaining flour and Amaretto extract & beat until batter is completely blended, about 2 minutes or so.
- 5. Here is the Amaretto extract that I used. I ordered it from Amazon, and a little really does go a long way.
- 6. Spray a loaf pan with Bakers Joy then add in the cake batter. Place in preheated 350 degree F. oven and bake for 45 minutes or until tooth pick inserted in center comes out clean. always allow at least an inch or so from top of cake pan to allow cake to rise. I used a 12 inch X 4 1/2 inch X 3 1/4 inch size loaf pan, a bit longer than average, but you may also use a round cake pan if desired.
