"PJ SPECIAL" GRILLED CHEESE



Not for the faint of heart, this sandwich has flavor to spare. My dad won't even eat regular grilled cheese any more.

1 cup shredded extra-sharp Cheddar cheese
4 teaspoons horseradish mustard (such as Silver Spring® Beer'n Brat®)
2 teaspoons minced garlic
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch cayenne pepper
2 teaspoons softened butter, or to taste
2 slices whole grain bread

Steps:

  • Mix Cheddar cheese, horseradish mustard, garlic, salt, pepper, and cayenne pepper together in a bowl.
  • Spread 1 teaspoon butter on one side of a slice of bread. Flip; spread Cheddar cheese mixture evenly over unbuttered side. Top with the other slice of bread. Spread 1 teaspoon butter on top.
  • Preheat a griddle over medium-high heat. Place sandwich on the griddle and press down with a spatula to flatten slightly. Cook until browned, 2 to 3 minutes. Flip and continue cooking until second side is browned, 2 to 3 minutes more.
