8 -12 pepperoni slices
2 slices provolone cheese
mozzarella cheese
parmesan cheese

crushed red pepper flakes

  • Cut into four triangles, and enjoy!

GLUTEN FREE PEPPERONI PIZZA QUESADILLA

Gluten Free Pepperoni Pizza Quesadilla image

In my quest for gluten-free, yeast-free pizza, I'm always trying different things to get that pizza taste that I crave but can't have. One day a few months ago I was really craving pizza while I was at the grocery store, so I bought some pizza sauce, turkey pepperoni and mozarella cheese and this is what I came up with. Not quite the same thing as the pizza I remember, but a pretty close second and it's ready in a pinch! Note: I've also made this with Italian turkey sausage or just plain cheese depending on my mood.

LUNCHBOX PIZZA QUESADILLA

Lunchbox Pizza Quesadilla image

Lunchbox food for kids! This is a simple lunchbox "pizza" that can be made 100's of different ways for your child. *Measurements are an estimation so use more or less to suit your tastes.

Categories     Lunch/Snacks

Time 10m

Yield 1 Quesadilla Pizza, 1 serving(s)

Number Of Ingredients 4

2 -8 inches flour tortillas (small size to fit in lunchbox)
3 tablespoons spaghetti sauce or 3 tablespoons pizza sauce
1/4 cup shredded cheese (I like Monterey Jack, but use what you like)
8 slices pepperoni

Steps:

  • These are made just like any other quesadilla or grilled cheese sandwich.
  • Spray the bottom of a non-stick skillet with cooking spray and preheat.
  • When the pan is fairly hot place 1 Flour Tortilla in the pan.
  • Fairly quickly (because you want to get everything on before the bottom starts to brown) spread on a few tablespoons of sauce.
  • Then add a layer of Pepperoni (and anything else you like).
  • Then top with shredded cheese.
  • Top it off with the 2nd Flour Tortilla.
  • Just like any other quesadilla or grilled cheese let it brown then flip it over. If all of the cooking spray was absorbed you can spray on a little more, but you usually don't need to.
  • After both sides are browned and the insides are hot and melted take the "pizzas" out to cool.
  • Once cooled slice in 1/4 like a pizza and wrap snugly with plastic wrap or aluminum foil.
  • Tips and Ideas.
  • My son is not super picky so I made these in batches and freeze and then take them out the morning of school and pop into his lunchbox. It is usually thawed and yummy by lunch time. If you freeze them you need to let the cool completely first the wrap them separately in plastic wrap and then aluminum foil to prevent ice crystals from forming.

Tips:

  • Choose high-quality ingredients: Fresh and flavorful ingredients make all the difference in a pizza quesadilla. Opt for high-quality cheese, like mozzarella or cheddar, and fresh vegetables for the best results.
  • Don't overcrowd the quesadilla: Pizza quesadillas can easily become overstuffed and difficult to fold. Stick to a single layer of fillings so that the quesadilla cooks evenly and holds together well.
  • Cook the quesadilla slowly and evenly: Patience is key when cooking a pizza quesadilla. Cook it over medium-low heat so that the cheese has time to melt and the fillings have time to warm through without burning.
  • Use a tortilla that is large enough to fold in half: A standard burrito-sized tortilla is a good option for pizza quesadillas. Make sure that the tortilla is pliable and easy to fold.
  • Serve the pizza quesadilla with your favorite toppings: Pizza quesadillas are delicious on their own, but you can also top them with your favorite pizza toppings, such as extra cheese, pepperoni, or vegetables.

Conclusion:

Pizza quesadillas are a quick and easy meal that can be enjoyed by people of all ages. They are a great way to use up leftover pizza toppings or to create a new and exciting meal. With a few simple tips, you can make a pizza quesadilla that is crispy, cheesy, and delicious. So next time you are looking for a quick and easy meal, give pizza quesadillas a try!
