1 large bunch broccoli (about 1 1/2 pounds), cut into florets, stalks peeled and thinly sliced
1/4 cup olive oil, plus more for drizzling
1/4 teaspoon red pepper flakes, plus more to taste
Kosher salt and freshly ground black pepper
1 pint red and yellow grape tomatoes, halved
1 clove garlic, minced
6 naan flatbreads
1 1/2 pounds fresh mozzarella, thinly sliced
3 tablespoons chopped pitted green olives
3 tablespoons salted roasted pepitas

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the broccoli with 3 tablespoons olive oil and the red pepper flakes on a rimmed baking sheet. Sprinkle with salt and pepper.
  • Mix the tomatoes with the garlic in a small bowl. Sprinkle with salt and pepper.
  • Roast the broccoli until it begins to turn brown, 16 to 18 minutes. Add the tomatoes to the baking sheet, then toss with the broccoli and roast until tender, about 6 minutes.

4 leaves fresh basil leaves, rolled and finely sliced
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with parchment paper.
  • Place broccoli florets into a food processor and pulse until broccoli is riced. Transfer to a clean paper towel and squeeze out as much water as possible.

2 tablespoons olive oil
2 tablespoons salted butter
1/2 large yellow onion, sliced thin
2 cloves garlic, minced
1 head broccoli, cut into small florets
Kosher salt and freshly ground black pepper
All-purpose flour, for rolling out the dough
One 1-pound loaf frozen bread dough, thawed
2 tablespoons sun-dried tomato pesto
1 cup shredded Cheddar
8 slices mozzarella
8 fresh basil leaves, plus more for garnish
1/2 cup grated Parmesan
One 24-ounce jar marinara, warmed

Steps:

  • Preheat the oven to 400 degrees F. Oil a baking sheet with 1 tablespoon olive oil and set aside.
  • Heat the butter in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes. Add the broccoli and season to taste with salt and pepper. Cook until the broccoli has softened slightly and become bright green, about 1 minute. Remove from the heat and set aside.
  • Lightly flour a clean work surface and stretch or roll the dough into a large rectangle, about 11-by-13 inches.
