Time 30m

Yield 24

Number Of Ingredients 9

cooking spray
1 (16 ounce) package refrigerated pizza dough
¾ cup shredded mozzarella cheese, or to taste
1 (6 ounce) package sliced pepperoni, or to taste
1 tablespoon olive oil
1 teaspoon Italian seasoning
½ teaspoon garlic powder
2 tablespoons grated Parmesan cheese
2 cups marinara sauce, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 24-cup mini muffin tin with cooking spray.
  • Roll pizza dough on a lightly floured surface into a 12x18-inch rectangle. Use a pizza cutter to slice dough into 24 squares. Place mozzarella cheese and pepperoni slices on each square; you'll need to be able to enclose the toppings in the dough so keep that in mind. Carefully lift up each square and wrap dough around toppings. Pinch to seal shut and place seam-side down in the prepared muffin cups.
  • Brush the tops of the dough balls with olive oil, then sprinkle with Italian seasoning and garlic powder. Top with Parmesan cheese.
  • Bake in the preheated oven until golden brown on top, about 10 minutes.
  • Meanwhile, heat marinara sauce in a saucepan over medium-low heat.
  • Remove pizza "cupcakes" from the oven and serve with warm marinara on the side for dipping.

Time 45m

Yield 24

Number Of Ingredients 11

2 tablespoons olive oil, or more as needed
1 (13.8 ounce) can refrigerated pizza dough (such as Pillsbury®)
1 teaspoon garlic salt
1 cup tomato sauce
1 cup sliced pepperoni
1 cup chopped bell pepper
½ cup chopped red onion
1 cup shredded 4-cheese Mexican blend cheese
1 cup diced salami
1 cup shredded mozzarella cheese
¼ cup shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Use the oil to lightly grease the cups of two 12-cup muffin tins.
  • Take pizza dough and put enough in each cup to cover the bottom and 1/3 to 1/2 up the sides. Sprinkle garlic salt over top, then spoon 1 tablespoon sauce onto each crust.
  • Layer toppings on the sauce: pepperoni, bell pepper, and onion. Add about 1 tablespoon Mexican cheese to each and continue layering toppings: salami, more bell pepper, and more pepperoni. Ok, so technically these are pizza muffins, but although "pizza cupcakes" doesn't sound very appetizing, these make delicious snacks and lunches. My family has begged me to make these again. They are best when you dip them in seasoned tomato sauce.

Tips:

  • For a crispy cupcake crust, use a combination of all-purpose flour and bread flour.
  • To prevent the cupcakes from sticking to the pan, grease the cups thoroughly with cooking spray or line them with cupcake liners.
  • Fill the cupcake cups only about 2/3 full, as they will rise during baking.
  • Bake the cupcakes at a high temperature (400°F) for a short amount of time (12-15 minutes) to create a crispy crust and a fluffy interior.
  • Allow the cupcakes to cool completely before frosting them, as the frosting will not adhere properly to warm cupcakes.
  • For a fun and festive presentation, decorate the cupcakes with your favorite pizza toppings, such as pepperoni, sausage, bell peppers, and onions.
