1 (10 ounce) roll store bought pizza dough
2/3 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup pizza toppings (about 1/2 cup of each, unless you are using only one)
1 -2 tablespoon olive oil
1 -2 tablespoon garlic parmesan seasoning (a mixture of finely grated parmesan cheese, garlic salt, and parsley flakes. Not sure on the amounts)

Steps:

  • Preheat the oven to 425.
  • Unroll the pizza dough onto a large cookie sheet.
  • Press the dough out so that it is about the same thickness all around and so that it covers the cookie sheet.
  • Cut into 4 equal size rectangles.
  • In a bowl, mix sauce, cheese, and toppings.
  • Spoon equal amounts of toppings into the middle the rectangles.
  • Lightly spread out the sauce mixture.
  • Fold one corner so that it meets with the opposite corner.
  • Crimp the edges so that the calzones seal.
  • Mix olive oil and parmesan cheese mix.

9 teaspoons pizza sauce
1 (1.75 ounce) package pepperoni (such as Hormel®)
4 ½ tablespoons shredded mozzarella cheese
avocado oil cooking spray

Steps:

  • Roll out pizza dough on a lightly floured surface. Cut out 9 circles using a 2 1/8-inch biscuit cutter. Roll each circle into a 4 1/2-inch disc. Fill each disc with 1 teaspoon pizza sauce, 3 slices pepperoni, and 1/2 tablespoon mozzarella cheese. Fold over, secure edges by folding, and crimp with the tines of a fork.
  • Preheat an air fryer to 375 degrees F (190 degrees C). Line the air fryer basket with parchment paper and spray with avocado oil. Place a batch of calzones into the basket and mist them with avocado oil.

These little mini pizza calzones were always my fast food alternative for the grand kids and they always went like hot cakes! Stuff them with anything your kids like, I guarantee you they won't last long! Sausage, pepperoni, mozzarella cheese and pizza sauce, what could be better?

8 oz thin sliced pepperoni
8 oz bulk italian sausage
1/2 small onion
1 tsp minced garlic
4 tsp canola oil
1 tube refrigerated pizza dough
3/4 c mozzarella cheese, shredded
1 c pizza sauce
1 c marinara sauce
1/4 c butter, melted
1/4 c italian salad dressing
1 Tbsp yellow mustard

Steps:

  • 1. In large non stick skillet, brown Italian sausage over medium heat until sausage crumbles; drain and set aside. In separate skillet, saute' onion and garlic in canola oil over medium heat, 3 minutes or until tender. Add to the sausage and set aside.
  • 2. Preheat oven to 450 degrees.
  • 3. Divide dough into eight pieces. Roll each dough piece into a 3 inch circle. Spread a thin layer of pizza sauce over the dough. Spoon sausage mixture equally over half of each circle leaving a 1/2 inch border. Top equally with pepperoni and cheese, or whatever other ingredients you desire.
  • 4. Fold dough over filling until edges almost meet. Bring bottom edges over top edges and crimp dough with fingers to for rim. Prick tops of calzones with fork to allow steam to escape. Place on large baking sheet covered with foil and sprayed with non stick spray.
  • 5. Whisk melted butter, Italian dressing and mustard together until incorporated. Using a pastry brush, brush the tops of the calzones with butter mixture until calzone is well coated.
  • 6. Bake in preheated oven for 10 to 12 minutes or until lightly browned. Serve with warm marinara sauce.

It is crispy and flavorful, I like to sub some whole wheat flour for real artisan taste!

1 cup lukewarm beer or 1 cup lukewarm water
2 tablespoons sugar
1 teaspoon salt
1 tablespoon butter
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

2 1/2 cups bread flour, sub whole wheat flour as desired
2 1/2 teaspoons bread machine yeast
cornmeal, for sprinkling

  • Place all ingredients except cornmeal into your bread machine according to your manufacturer's directions. For my bread machine it is in the order listed above.
  • Once dough cycle has finished, turn dough out onto a floured surface. Preheat oven to 400°F and roll or stretch dough out into a 12 inch round (medium crust) or several small rounds or a large rectangle. Place pizza on a greased cookie sheet.
  • Sprinkle cornmeal over top of dough. Bake pizza for 10 minutes at 400ºF.
  • Remove from oven and cover with toppings. Reduce oven temp to 350ºF and bake 10 minutes or until cheese is bubbly and browned.

24 slice pepperoni
1 c onion, diced
1 c banana pepper rings
2 pkg (11 oz each) refrigerated pizza crust dough
1 1/2 c marinara sauce
2 c shredded mozzarella cheese
1/2 c butter, melted
1 tsp garlic salt
1 tsp oregano
1 tsp red pepper flakes
2 Tbsp yellow corn meal

Steps:

  • 1. Preheat oven to 425°F.
  • 2. Place butter in a microwave bowl and sprinkle with garlic salt. Microwave until butter is melted.
  • 3. Spray 15x10-inch baking sheet with cooking spray and sprinkle with corn meal.
  • 4. Unroll pizza dough onto parchment paper and cut each can of dough into 3 wide strips. Spread marinara sauce lengthwise down center of dough to within 1/2 inch of each short edge.
  • 5. Layer pepperoni (4 slices each) evenly on top of sauce. Sprinkle cheese evenly over pepperoni. Add onions and pepper rings.

2 tubes refrigerated pizza dough (or can make your own)
1 Large can(s) tomato sauce
1 Small can(s) tomato paste
1 medium onion, finely chopped or grated
1 clove garlic, finely diced
4 Tbsp pizza seasoning (or make your own blend using rosemary,thyme,oregano,basil, & red pepper flakes)
salt and pepper to taste
favorite pizza toppings...
note* ideas for toppings : pepperoni, ital sausage, ham, pineapple, green peppers, mozzarella, cheddar, smoked gouda, feta cheese, mushrooms , etc)
note* can sub 1 - 2 jars of pizza sauce to save time in which case you don't need tomato sauce, paste, or pizza seasonings unless you wish to add extra herbs to your pizza

Steps:

  • 1. In large saucepan, saute onion and garlic in 1 tbsp of olive oil till onion is clear. Add tomato sauce and tomato paste and heat till slow simmer. Add pizza seasoning, salt and pepper and cover... simmer for about 20 minutes or so or till sauce has thickened. then set aside to cool.
  • 2. Roll out pizza dough to about 1/2 to 1/4 inch thick and cut into rectangles roughly about the size of your hand ( can make them smaller if you want to use as an appetizer )
  • 3. Preheat oven to 425. Place pizza rectangles on a baking sheet. On each rectangle, spread about 2 to 3 tbsp pizza sauce , or til dough is covered to within a half inch from borders.
  • 4. top with your favorite toppings and fold over the crust empanada style. Seal edges and cut steam vents in the top. If making different kinds you can use a paring knife to mark each one different so you know which "pizza" is which.
  • 5. Pop them in the oven and bake for approximately 20 minutes or till crust is a light golden brown. Let rest 5 - 10 minutes before serving.
  • 6. Some variations I've tried: sauteed mushrooms and green peppers, pepperoni, italian sausage, ham and pineapple, roasted veggie, Hamburger & cheddar, 4 cheese, just to name a few. If you choose, you can serve them with a small bowl of warmed up pizza sauce on the side for dipping
  • 7. If making the larger sized, you can get about 6 servings per tube of refridgerator pizza dough. Appetizer size you can get approximately 12 to 18 servings per tube.
