1 stick unsalted butter melted

  • In a small heavy skillet cook the bell pepper in the oil over moderate heat stirring until it is softened and let it cool. In a large bowl combine the bell pepper the artichoke the mayo the scallions the pimiento the parmesan the lemon juice the worcestshire sauce the jalapeno pepper and the celery salt blend the mixture until it is combined well and stir in the crab meat gently. 1/2 cup freshly grated parmesan cheese
2 teaspoons basil (dried)

  • Combine ingredients except bread. Using a sharp knife, split pita into rounds. Spread each with a tablespoon or so of mixture and place on a cookie sheet. Freeze uncovered, then transfer into plastic bag. When ready to use, preheat oven to 375°. Cut frozen circles into 6ths (small size) or 8ths (large loaves) using a sharp carving knife. Steps:

  • Heat 1 1/2 teaspoons oil in large nonstick skillet over medium-high heat. Add garlic; sauté 10 seconds. Add spinach; sauté until wilted and tender, about 2 minutes. Cool.
  • Puree spinach and green onions in processor. Transfer to medium bowl. Mix in sour cream and lemon juice. Season with salt and pepper. Cover and chill.

  • Eggplant Spread: Preheat oven to 450. Spray 2 large (shiny) baking sheets with cooking spray. Whisk oil and next 4 ingrediants in large bowl. Add eggplant, bell peppers, and onions. Toss to coat. Divide mixture between the two sheets. Roast until vegetables are tender and lightly browned, turning occasionally, about 35 minutes. Cool 15 minutes on sheets. Transfer half of vegetable mixture to food processor. Using on/off turns, process until coarse puree forms. Transfer to bowl. Repeat with remaining mixture. Season with salt and pepper. 4 tablespoons plain yogurt
1 tablespoon tahini
1 teaspoon lemon juice

1/2 yellow bell pepper
4 tablespoons tomatoes, diced
6 kalamata olives, thinly sliced
2 tablespoons feta cheese, crumbled

Steps:

  • Preheat oven to 425 degrees F.

2 pkg pita bread, 6-count (any type)
olive oil to brush on
coarse sea salt
cake cooling racks that will fit over a cookie pan

Steps:

  • 1. To make baked pita triangles, cut the bread into fourths using a pizza cutter. You should be able to do 4-6 at a time, stacked. Spread triangles out on a wire rack over a baking sheet. Brush with olive oil and sprinkle with salt if desired. Bake at 350-375 degrees about 8-12 minutes, until crisp but not too brown. Cool on rack; package in an air-tight container.
  • 2. NOTE: you can also bake them on sheets lined with crumpled aluminum foil. Makes clean up easier, and still no turning over during baking!
