PITA PIZZA POCKETS

Pita Pizza Pockets image

A very yummy and kid-friendly lunch sandwich that can be as easy or as complex as you want it to be. I thought of it today on the way home from my son's preschool using the left over stuff I just happened to have in the house. My kids loved it and I could make it in just a little more time than it would have taken me to make them peanut butter and jelly (the usual lunch). I enjoyed it more than peanut butter and jelly too :-)

Tips:

  • Ensure that the pita bread you use is fresh and soft. This will make it easier to fold and prevent it from tearing.
  • If you don't have pizza sauce, you can use tomato sauce, marinara sauce, or even salsa as a substitute.
  • Feel free to get creative with your toppings! You can use any combination of vegetables, meats, and cheeses that you like.
  • If you want a crispier pita pocket, you can brush the outside with olive oil before baking.
  • Be careful not to overfill the pita pockets, or they will be difficult to fold and seal.
  • If you are using a lot of wet toppings, such as tomatoes or spinach, pre-cook them before adding them to the pita pockets. This will prevent the pita bread from getting soggy.
  • Serve the pita pizza pockets immediately after baking, while they are still hot and crispy.
