When my girls were young, they could not eat a taco without breaking the shell and having a mess! I started making them pita bread sandwiches and they loved them. Adults like them also. Very easy and a quick meal on weekdays when time is short.

1 lb ground round
1 medium onion, diced
1 package taco seasoning, mild
1 package pita bread
1 cup water
buttermilk ranch dressing
shredded mexican cheese
lettuce, shredded
cucumber, chopped
avocado, slices

Steps:

  • brown meat in 10 inch skillet until cooked.
  • add onion and cook for 10 minutes.
  • add taco seasoning with water and cook additional 10 minutes.
  • drain mixture
  • cut pita bread in half and "open" pocket.
  • place ground meat mixture inside
  • put whatever you want inside your taco and serve ranch dressing over the top.

2 small cans of tuna
6 ribs celery, about 1/4 pound
1 onion, preferably red, about 1/2 pound
2 sweet green peppers, about 1/2 pound
1 cucumber, about 1/2 pound
2 or 3 red, ripe tomatoes, cored, about 3/4 pound
1 cup finely chopped parsley
12 anchovy fillets, finely chopped
2 teaspoons finely minced garlic
3 tablespoons red-wine vinegar
1 egg yolk
Freshly ground pepper to taste
1/2 cup olive oil
6 rounds pita bread

Steps:

  • Drain the tuna and cut it into bite-size flakes.
  • Chop the celery coarsely. There should be about two cups.
  • Cut the onion into quarters. Cut each quarter crosswise into thin slices. There should be about two cups.
  • Cut each pepper lengthwise into quarters. Cut each quarter crosswise into thin strips. There should be about three cups.
  • If desired, peel the cucumber. Cut the cucumber in half lengthwise. Cut each half crosswise into thin slices. There should be about two cups.
  • Cut each tomato crosswise in half. Squeeze gently to loosen the seeds; discard them. Cut the tomatoes into cubes. There should be about two cups.
  • In a large mixing bowl, combine the tuna, celery, onions, green peppers, cucumber, tomatoes and parsley.
  • In a separate bowl, combine the anchovy fillets, garlic, vinegar, egg yolk and pepper. Start beating with a wire whisk and gradually add the oil. Beat until thickened.

4 eggs (hard boiled)
85 g low-fat mayonnaise or 1/4 cup low-fat mayonnaise
1 teaspoon English mustard
1 tablespoon white wine vinegar
2 tablespoons sour cream
salt
pepper
2 tomatoes (deseeded and chopped)
1 red capsicum (bell pepper deseeded and chopped)
1 potato (cooked and chopped)
2 spring onions (green chopped)
4 whole wheat pita bread (wholemeal)

1 1/2 pounds link sausages (see note)
3/4 pound sweet peppers, preferably yellow and red
3/4 pound zucchini, trimmed and cut into 1/2-inch cubes
Salt to taste, if desired
1/2 pound mozzarella
3 cups finely shredded romaine lettuce leaves
2/3 cup herb mayonnaise (see recipe)
Freshly ground pepper to taste
2 red, ripe tomatoes, cored and cut into wedges, for garnish
6 rounds pita bread

Steps:

  • Preheat the broiler. Place a rack in a pan and arrange the sausages on top. Place under the broiler and cook, turning as often as necessary, until the sausages are cooked through, about 12 to 15 minutes. Drain well. Let stand until they reach room temperature.
  • Cut away and discard the core of each pepper. Cut each pepper in half. Cut away and discard the white inside veins and the seeds. Cut the peppers into half-inch pieces. There should be about two cups. Set aside.
  • Drop the zucchini cubes into salted boiling water. Let cook about one minute, no longer. Drain immediately and run briefly under cold running water. Drain well.
