Layered Pistachio Dessert (Uses Jell-O Pudding Mix) image

This recipe reminds me of those big, fun family dinners we used to have when I was a kid. This is one of my favorite recipes of my grandmother's. The layers consist of a nutty baked bottom crust, creamy cheesecake-like center and top layer of pistachio pudding. If desired, you could also use any other flavor of pudding mix. Yummy!

1 1/2 cups flour
3/4 cup butter, melted
1 cup walnuts, chopped
1 (8 ounce) container Cool Whip
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
2 (8 ounce) packages pistachio pudding mix
3 cups milk

Steps:

  • Press first three ingredients into a 13" x 9" pan and bake at 350 degrees for 20 minutes. Allow to cool thoroughly.
  • Beat Cool Whip, cream cheese and confectionery sugar with electric mixer; spread over cooled crust.
  • Beat pudding mix and milk well with electric mixer on low setting. Let mixture stand until set. Then carefully spread over cream cheese layer.
  • Cover and refrigerate for one hour. Slice into 2" x 2" pieces.
  • Store refrigerated for up to five days.

LAYER 1:
1 cup powdered sugar
1 (8oz) cream cheese
1 cup cool whip
LAYER 2:
2 regular sized pkgs instant pistachio pudding mix
3 cups milk
TOPPING:
1 cool whip
chopped pistachios

Steps:

  • 1. Mix butter, flour, nuts; press into 9x13 inch pan. Bake 350 for 20 min. Cool.
  • 2. Mix powdered sugar, cream cheese and cool whip; spread on cooled crust.
  • 3. Beat together pudding mix and milk until thick. Spread on cream cheese layer
  • 4. Top with a layer of cool whip and chopped nuts. Refrigerate.

8 ounces sugar-free instant pistachio pudding (2 small packages)
16 ounces crushed pineapple (do not drain)
8 ounces sugar-free Cool Whip
8 ounces small curd cottage cheese

  • Dissolve pudding in pineapple.
  • Add cottage cheese and then fold in Cool Whip till well blended.
  • Chill.
  • Note: I have not tried it yet but I am sure you could add 12oz - 16 oz of Cottage Cheese to up the protien.

This is a nice lite dessert that my family just loves. Great for St. Patty's Day or any occasion. Enjoy!

60 ritz crackers
1 stick butter or margarine (i always use butter)
1 small instant pistachio pudding
1 small instant vanilla pudding
1 1/2 c milk
1/2 qt vanilla ice cream
8 oz cool whip
chopped nuts, chopped cherries, shaved chocolate

Steps:

  • 1. Set ice cream out to thaw. I use 1/2 of a 1.5 qt of any kind of vanilla ice cream.
  • 2. Place stick of butter in a 9x13 pan and melt in the oven on low temperature. While butter is melting, crush crackers with a rolling pin. Mix melted butter and crackers together and pat down evenly in the pan. Put back in oven for 8-10 minutes until crispy but not brown.
  • 3. In a seperate bowl mix together pistachio and vanilla pudding with milk. Add a drop of green food coloring if desired. Fold in ice cream. Pour mixture over crumb crust and refrigerate for one hour to set.
  • 4. After one hour spread Cool Whip on pudding/ice cream layer. If desired, sprinkle chopped nuts or cherries or shaved chocolate for decoration. Chill for couple hours before serving.

72 -90 Ritz crackers (2-2 1/2 sleeves)
1/2 cup butter, melted (1/2 cup)
2 (3 1/2 ounce) packages instant pistachio pudding mix
2 cups milk
1 quart vanilla ice cream, softened
1 (8 ounce) container Cool Whip
1 chocolate candy bar (to garnish)

Steps:

  • Place the crackers into a plastic storage bag and break into crumbs with a rolling pin. Pour crumbs into a bowl and add the melted butter. Spread into the bottom of a 13x9 inch pan to make a crust.
  • Bake at 350°F (4 gas marks) for 20 minutes.
  • Cool.
  • Mix pudding with 2 cups of milk using the directions on the side of the package. Add in softened (not melted) vanilla ice cream.
  • Pour over the cooled cracker crust. Top with Cool Whip.
  • Use a vegetable peeler to create chocolate curls as garnish across the top.
  • Chill until ready to serve.

This is a smaller version than she usually makes- because I am not a big fan of pistachio anything.I use this smaller version. Kathy makes a Pistachio Fruit Pudding too- I will post that one...

1/3 c butter or margarine
1 1/2 Tbsp granulated sugar
3/4 c all purpose flour
2/3 c chopped toasted pecans
4 oz softened cream cheese
1/3 c powdered sugar
3 c thawed whipped topping
3.4 oz pkg. instant pistachio pudding mix
1 1/4 c cold milk

Steps:

  • 1. Heat oven to 375^. Spray an 8-inch sq. baking dish with cooking spray. --- Beat together butter, and sugar,until light and fluffy. Add flour and stir until almost blended; then stir in 1/3 cup of the pecans. Press evenly into bottom of prepared pan- Bake for 13-15 minutes or until set. Cool completely on wire rack.
  • 2. Beat together cream cheese, powdered sugar and about 1 cup of the whipped topping. Spread over cold crust.
  • 3. Whisk pudding mix and milk together in a small bowl for 2 minutes or until it thickens. Spread the pudding over cream cheese mixture. Spread remaining whipped topping over pudding mixture, then top with remaining nuts. Chill for 3 hours before serving. Can make this the day before and keep refrigerated.

Tips:

  • For a richer pudding, use heavy cream instead of milk.
  • To make a vegan pudding, use almond milk or coconut milk instead of regular milk.
