Pistachio-Crusted Halibut With Spicy Yogurt image

From Gourmet Magazine and posted for ZWT #6. After he went on the Blue Voyage, Boston chef Chris Schlesinger came up with the idea for this recipe, which brings together many of the characteristic flavors of Turkey's Mediterranean coast. Halibut works best, but you can use any mild, firm-fleshed white fish.

Time 35m

Yield 4 servings

Number Of Ingredients 9

1 lemon
3 bunches broccolini (about 1 1/2 pounds), trimmed
5 tablespoons extra-virgin olive oil
Kosher salt
1/4 teaspoon red pepper flakes
1/2 cup unsalted roasted pistachios
1/4 cup panko
2 tablespoons za'atar
4 6- to 7-ounce skinless halibut fillets

Steps:

  • Place a rimmed baking sheet in the center of the oven and preheat to 450˚ F. Grate the lemon zest and set aside. Cut the lemon into 4 wedges and add to a large bowl along with the broccolini, 2 tablespoons olive oil, 1/2 teaspoon salt and the red pepper flakes. Toss to coat. Spread on the hot baking sheet and roast until crisp-tender and charred, flipping halfway through, 15 to 20 minutes.
  • Meanwhile, pulse the pistachios in a food processor until finely chopped. Add the reserved lemon zest, panko, za'atar and 1/2 teaspoon salt; pulse to combine. Transfer to a shallow bowl. Press the halibut fillets in the pistachio mixture, turning to fully coat all sides.

For Halibut:
4 (1 1/4-inch-thick) pieces skinless halibut fillet (about 6 ounces each)
1 cup whole milk
1/3 cup shelled pistachios (preferably Turkish), finely chopped
3 tablespoons cornmeal
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil
For Spicy yogurt:
1 cup thick Turkish or Greek yogurt (8 ounces)
1/2 cucumber, peeled, seeded, and finely diced (3/4 cup)
2 tablespoons chopped fresh dill
1 tablespoon finely chopped onion
1 tablespoon fresh lemon juice
2 teaspoons dried maras pepper
1/2 teaspoon salt, or to taste

Steps:

  • Put fish in a shallow baking dish, pour milk over it, and chill, covered, turning over once, 30 minutes.
  • Meanwhile, stir together pistachios and cornmeal in a shallow bowl.
  • Remove fish from milk, letting excess drip off. Transfer to a plate and sprinkle all over with salt and pepper, then dredge lightly in cornmeal-pistachio mixture. Transfer to a clean plate as coated.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté fish, turning over once, until golden and just cooked through, 6 to 8 minutes total.
  • While fish cooks, stir together all ingredients for spicy yogurt.
  • Serve fish with spicy yogurt on the side.

Tips:

  • Select Fresh Halibut: Choose firm and thick halibut fillets with a mild, sweet aroma. Avoid any fillets with a strong fishy smell or discolored flesh.
  • Prepare the Pistachio Crust: Finely chop the pistachios to create a coarse texture in the crust. Use a food processor or a sharp knife to achieve even chopping.
  • Season the Halibut: Before coating the halibut in the pistachio crust, season it with salt and pepper. This will help enhance the natural flavors of the fish.
  • Use Panko Breadcrumbs: Panko breadcrumbs add a crispy texture to the pistachio crust. They are lighter and airier than regular breadcrumbs, resulting in a more delicate coating.
  • Make the Spicy Yogurt Sauce: Combine Greek yogurt, Sriracha sauce, lemon juice, garlic, and fresh herbs like cilantro or chives. Adjust the amount of Sriracha to achieve your desired level of spiciness.
  • Pan-Fry the Halibut: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Pan-fry the pistachio-crusted halibut until golden brown and cooked through. Alternatively, you can bake the halibut in a preheated oven at 425°F for 12-15 minutes.
  • Serve Immediately: Serve the pistachio-crusted halibut hot with the spicy yogurt sauce. Garnish with fresh herbs and lemon wedges for an extra burst of flavor.

Conclusion:

Pistachio-crusted halibut with spicy yogurt is a delectable dish that combines the mild flavor of halibut with the nutty crunch of pistachios. The spicy yogurt sauce adds a delightful tang and heat, creating a well-balanced and flavorful meal.
