Yield 4 servings

Number Of Ingredients 21

1 chicken
1 cup olive oil
½ cup white vinegar
8 bird-eye chillis
8 cloves garlic
2 medium onions
4 teaspoons dried oregano
4 teaspoons paprika
2 teaspoons sugar
4 teaspoons salt
2 teaspoons pepper
1 roasted pepper
1 lemon, juiced
1 lb chip
½ teaspoon smoked paprika
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon white pepper
1 teaspoon salt
2 oz mayonnaise
2 oz hummus

Steps:

  • Remove the chicken's backbone by using a pair of kitchen scissors. Turn it over and flatten it down to spread the chicken out as much as possible.
  • Blend together all of the marinade ingredients in a food processor and spread half of it over the chicken.
  • Cover and marinate in the fridge for at least 3 hours or overnight.
  • Roast in the centre of a preheated oven for 60 minutes at 200°C (400°F), or until the thickest part of the thigh is 75°C. Once the chicken is cooked through, allow to rest for 10 minutes before serving.
  • Simmer the other half of the marinade for 2-3 minutes to make the Peri Peri sauce.
  • Use as a dip for your chicken or mix some into mayonnaise or hummus!
  • To make Peri Peri Chips, just shake some smoked paprika, chili powder, garlic powder and white pepper into your chips!
  • Enjoy!

PIRI PIRI CHICKEN

Piri Piri Chicken image

Chicken is marinated in a spicy piri piri pepper sauce, then grilled for this simple but flavorful African-inspired recipe. I like to serve this with a cool yogurt sauce and fonio pilaf.

Time 5h5m

Yield 2

Number Of Ingredients 10

10 African bird's eye chile peppers
1 bunch cilantro
2 cloves garlic, minced
2 tablespoons vegetable oil
2 teaspoons white vinegar
2 limes, juiced
1 teaspoon salt, or to taste
1 teaspoon fresh ground black pepper, or to taste
1 chicken breast, cut in half
2 chicken leg quarters with skin

Steps:

  • Use rubber gloves to mince the chiles and place into a mixing bowl. Add cilantro, garlic, vegetable oil, vinegar, lime juice, salt, and black pepper. Mix piri piri sauce well.
  • Place chicken breasts and legs into a resealable plastic bag. Pour in piri piri sauce, seal the bag, and shake gently to completely cover chicken. Put the bag in the refrigerator to marinate at least 4 hours.
  • Remove bag from the refrigerator about 30 minutes before cooking to allow chicken to come to room temperature.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the bag; discard bag and cilantro. Cook chicken on the preheated grill, rotating as necessary to cook evenly, until juices run clear and an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C), about 25 minutes.

Tips:

  • Choose the right chicken. Boneless, skinless chicken breasts or thighs work best for this recipe as they are easy to cut into bite-sized pieces. Ensure the chicken is fresh and chilled.
  • Make sure the chicken is dry before coating it in the flour mixture. This will help the coating adhere to the chicken and prevent it from becoming soggy.
  • Use a combination of all-purpose flour and cornstarch in the coating mixture. This will help create a crispy exterior on the chicken.
  • Season the flour mixture generously with salt, pepper, and paprika. This will add flavor to the chicken.
  • Don't overcrowd the chicken in the frying pan. This will prevent it from cooking evenly.
  • Fry the chicken in batches until it is golden brown and cooked through. This may take 3-4 minutes per batch.
  • Drain the chicken on paper towels to remove excess oil.
  • Serve the chicken immediately with your favorite dipping sauce.

Conclusion:

This Piri Piri Popcorn Chicken recipe is a quick and easy way to make a delicious and flavorful appetizer or main course. The combination of piri piri sauce, lemon juice, and garlic creates a zesty and tangy flavor that is sure to please everyone. Serve it with your favorite dipping sauce and enjoy!
