DISHWASHER SALMON WITH A PIQUANT DILL SAUCE

Dishwasher Salmon
4 (6-ounce) salmon fillets
4 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Heavy-duty aluminum foil
Piquant Dill Sauce, recipe follows
2 tablespoons butter
2 leeks, white part only, finely chopped, then thoroughly washed
1 jalapeno chile, seeds and membranes removed, finely diced
2 garlic cloves, minced
1 cup vegetable or chicken stock
1 1/2 cups lightly packed fresh dill, stems removed before measuring
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup sour cream

Steps:

  • Cut 2 (12-inch) square sheets of aluminum foil. Place 2 fillets side by side on each square and fold up the outer edges. Drizzle 1 tablespoon of lemon juice over each fillet. Season with salt and pepper.
  • Fold and pinch the aluminum foil extra tightly to create a watertight seal around each pair of fillets. Make sure the packet is airtight by pressing down on it gently with your hand. If air escapes easily, rewrap.
  • Place foil packets on the top rack of the dishwasher. Run dishwasher for the entire "normal" cycle. When cycle is complete, take out salmon, discard foil, place 1 fillet on each plate, and spoon a generous serving of dill sauce overtop.
  • Don't have a dishwasher? Bake foil-wrapped packets in a preheated 400 degree F oven for 12 minutes.
  • The Instruction Manual: 1. Seal individual-size fillets in aluminum foil. DO NOT ATTEMPT TO COOK A WHOLE FISH. 2. Place fish packets on the top rack. 3. Add dirty dishes and lemon-scented soap. This optional step is not recommended for novices. However, as long as the salmon is tightly sealed in the aluminum foil, it will not absorb any soapy taste or smell. 4. Set the dishwasher to the "normal" cycle. Modern dishwashers have "economy" and "cool dry" settings, which are undesirable because they conserve heat. However, on the other end of the spectrum, the "pots and pans" setting tends to overcook the fish. 5. Run salmon through the entire wash-and-dry cycle: approximately 50 minutes for most models. I have poached salmon in almost every make and model, and although the temperatures and duration of the cycles vary with each machine, a little more or less "washing" will not affect it greatly because salmon is extremely forgiving. 6. To heighten the drama for your disbelieving guests, and to prove that you have nothing up your sleeve, let them crowd around the dishwasher when you load the salmon. When the cycle is complete, invite them back to witness the unloading. 7. Troubleshoot. The only time I ever had a problem was on live national TV. Five minutes before going on the air I learned that the heating element in the on-camera dishwasher was broken. After a quick huddle with the producer, I was forced to make the most of the situation by baking the salmon in the (gasp!) oven. To avoid this pedestrian fate, ask yourself the million-dollar question: When your dishwasher last completed its cycle, were the dishes hot? As long as the answer is yes, you are ready to poach.
  • Melt the butter over medium heat in a saute pan. Add the leek, jalapeno, and garlic and saute until the leeks are translucent but not brown, about 5 minutes. Reduce heat to medium and add the stock. Simmer, uncovered, for 15 minutes. (Adjust heat as required to maintain simmer.) The liquid should reduce by half. Remove from heat and let cool.
  • Transfer to a blender or food processor and add the dill, lemon juice, salt, and pepper. Puree until smooth. Reserve and reheat just before serving. Stir in the sour cream at the last minute.

LOUISIANA CHICKEN SAUCE PIQUANT

This recipe was adopted from a 1969 cookbook that belonged to my grandmother. I've adjusted the ingredients and amounts to reflect today's cooking habits. Hope you enjoy it!

6 lbs chicken
3 cups cooking oil
4 garlic cloves, finely chopped
3 (14 ounce) cans diced tomatoes
1/2 cup water
1 cup celery, finely chopped
1 cup bell pepper, finely chopped
3 lbs onions
3 tablespoons creole seasoning (Tony Chachere's)

Steps:

  • Heat 3 cups of cooking oil hot enough to cook chicken.
  • Cut chicken into 2 inch pieces, season with the creole seasoning and fry in oil until done.
  • Remove the chicken from the oil.
  • In another frying pan, saute onions,celery, bell pepper and garlic until opaque looking and slightly limp.
  • To the vegetable mixture, add your chicken which has slightly cooled.
  • Add tomatoes and water to the mixture, then lower the flame allowing mixture to simmer for for one hour, stirring about every 10 minutes.
  • Serve with rice.
  • If you like yours to be a bit thicker, use 2 cans of diced tomatoes and 1 can (8 ounce) tomato paste and 1 cup water.

He mentions in his notes that the amount of jalapeno in the recipe can be halved for a lower heat level, but if you are worried about that, this recipe is definitely not for you. OOOH, it hurts so good !!!

2 1/4 cups chopped onions
1 1/2 cups chopped green bell peppers
3/4 cup chopped celery
3 cups chopped fresh tomatoes
1 cup canned tomato sauce
3 tablespoons minced jalapenos (can be jarred, but soak first to remove vinegar)
2 bay leaves
5 1/2 teaspoons ground cayenne pepper
1 1/2 teaspoons white pepper
1 teaspoon ground black pepper
1 1/2 teaspoons minced garlic
2 1/4 cups fish stock
1 1/2 teaspoons dark brown sugar
3/4 teaspoon salt
2 lbs peeled raw large shrimp
4 cups hot cooked rice

Steps:

  • Melt the butter in a 4-quart non-stick saucepan over high heat; add the onions, bell pepper, and celery and saute for about 2 minutes, stirring occasionally.
  • Add the tomatoes, tomato sauce, jalapeno, bay leaves, ground peppers, and garlic, stirring well; cook about 3 minutes and stir often.
  • Stir in the stock, sugar and salt and bring to a boil.
  • Reduce heat and simmer until flavors are married, about 20 minutes, stirring often.
  • Turn the heat up to high, and when the sauce is boiling, remove from heat.
  • Add in the shrimp, push them down in the sauce, cover the pan and let sit for 10 minutes.
  • Remove bay leaves.
  • To serve, mound 1/2 cup cooked rice in the center of each serving bowl, then pour about 1/2 cup sauce around the rice and arrange 8 shrimp on the top of the sauce.
  • Serve with a cool beverage of your choice-- you'll need it!

MEATLOAF WITH PIQUANT SAUCE

I found this recipe many years ago and my family loved it and so i've been making it ever since.

2 lb lean ground beef
1/4 c minced onions
1 tsp italian seasoning
3/4 c panko bread crumbs
3/4 c milk
2 eggs, beaten
1/2 tsp salt & freshly ground pepper
PIQUANT SAUCE
1 c thick ketchup (heinz)
1/2 c light brown sugar
1 tsp ground dry mustard
1/2 tsp ground nutmeg

Steps:

  • 1. Mix the ingredients for the sauce and set aside to thicken.
  • 2. Preheat oven to 350F. In a large bowl mix ground beef and remaining 6 ingredients. I then mix this thoroughly and form into a loaf shape, fit into loaf pan and pour the sauce over the top. Bake 350F for 1 hour or until meatloaf is no longer pink.
  • 3. After you take meatloaf out of the oven, remove meat out of pan and let it rest on a small wire rack to drain. Then slice and serve.

1 medium onion, finely chopped
1 cup water
1/2 cup cider vinegar
1/4 cup lightly packed brown sugar
1/4 cup tomato paste
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon dry mustard
1/2 teaspoon pickling salt

Steps:

  • Combine tomatoes, garlic, celery, peppers, onion& water in a large stainless steel or enamel saucepan.
  • Bring to a boil, reduce heat, cover & boil gently, stirring occasionally, for 20 minutes or until mixture has thickened& vegetables are soft.
  • Cool slightly; puree in a blender or food processor until smooth.
  • Return mixture to pot and add vinegar & spices.
  • Boil gently for 5 minutes to blend the flavours, stirring continuously.
  • Ladle sauce into hot, sterile jars allowing 1/2 inch of head space.
  • Process 15 minutes for 250 ml jars & 20 minutes for 500 ml jars.

1/4 cup extravirgin olive oil
3 large onions, thinly sliced
3 cups canned Italian imported tomatoes, drained, or 1 1/2 to 2 pounds very ripe plum tomatoes, seeded and chopped
4 medium size sweet red or green peppers, seeded and cut into thin 2-inch strips
1/4 cup chopped fresh basil leaves (or 1 tablespoon dried basil)
2/3 cup pitted Italian or Greek olives, chopped
1/4 cup capers, drained and chopped if very large
Salt
Freshly ground black pepper
1 pound spaghetti
Freshly grated Parmesan cheese, if desired

Steps:

  • Heat oil in a large saucepan or in a flame-proof casserole that will hold all ingredients, including cooked spaghetti, and can go to the table. Add onions and cook over medium heat, stirring constantly, until soft but not brown.
  • Add tomatoes. If using canned tomatoes, break up with a fork. Cook for 3 minutes. Add peppers and basil and cook over low heat, stirring frequently, for about 15 minutes, or until peppers are almost but not quite tender. Stir in olives and capers, cover and cook for 5 more minutes. Taste and season with salt and pepper if desired.
  • Bring 4 quarts of water to a rolling boil and add 1 tablespoon salt. When water reboils, add pasta and stir vigorously with a long-handled wooden spoon or fork to separate pasta strands and bring water quickly back to a boil. Cook until pasta is al dente.
  • Drain pasta and turn into the casserole with the sauce. Toss to mix and serve immediately, passing the Parmesan separately if desired.

1 pinch sugar
1 cup water

16 ounces fettuccine pasta
1/4 cup unsalted butter
1/4 cup extra virgin olive oil
1 onion (Chopped)
5 garlic cloves (Minced)
1 green pepper, Skinned, Seeded, Chopped (Roasted or Charred)
2 (12 ounce) cans tomatoes, whole and peeled (Drained, Seeded & Chopped at varying sizes)
2 tablespoons fresh basil (Finely Chopped)
2 teaspoons fresh parsley (Roughly Chopped)
1 teaspoon fresh oregano (Finely Chopped)
1 teaspoon granulated sugar
kosher salt
crushed red pepper flakes
other cajun seasoning or creole seasoning
fresh ground black pepper
1/4 cup white wine
freshly shredded parmesan cheese (recommended) (optional)
3 boneless skinless chicken breasts
mccormick 1-step jambalaya chicken seasoning (or similar)
2 tablespoons vegetable oil

Steps:

  • Drain tomatoes, reserve the juice. Seed the tomatoes completely and chop into various sizes. Set aside.
  • Roast bell pepper over open flame until fully charred. There will be some smoke. This CAN be done in a with a broiler, turn the pepper 90 degrees every 5 minutes. After charred, run under running water and rub off as much charred skin as possible. Remove the seeds and interior membrane, and dice the pepper. Set aside.
  • In a very large skillet or saut√© pan, melt 1/2 stick of unsalted butter over medium high heat. Add 1/4 cup of extra virgin olive oil. When the butter is melted, add onion and a pinch of kosher salt. Reduce heat to medium. Sweat onion for about 5 minutes, then add garlic, continue to cook over medium heat for another 2 minutes. Add green bell pepper and another pinch of kosher salt. After a few minutes, add tomatoes and basil, parsley, oregano and red pepper flake.
  • After 10 minutes, add 1/4 of the tomato juice and continue simmer until reduced. Add another 1/4 tomato juice and simmer until reduced. Add 1/4 cup white wine and deglaze (scrape) the bottom of the skillet.
  • While the sauce is simmering, in another non-stick pan, heat 2 TBSP of vegetable oil. Season the chicken breasts liberally with Jambalaya Seasoning. Blacken chicken for about 5 minutes per side (or until fully cooked). Remove chicken from pan and allow to rest 10 minutes.
  • After the sauce has reduced, add half of the remaining tomato juice, another pinch of salt, and 1 TSP of sugar. After reduction, add the remaining tomato juice and Tony Chachere's Seasoning to taste. Reduce heat to low.
  • In a large pot, bring enough water for the fettucine to a boil. Add salt to the water (this is the only chance you have to season your pasta, take advantage!).
  • Slice chicken into strips and add to sauce. Remove from heat.
  • Drain fettucine in a collander, do not rinse. After fully drained and noodles to sauce and toss to coat.
  • Sprinkle parmesan cheese to top. Serve with garlic bread, or crusty french bread. Enjoy.

1/4 cup all-purpose flour
1/2 teaspoon garlic salt
1/4 teaspoon paprika
1/8 teaspoon pepper
2 tablespoons shortening

Steps:

  • Cut liver into serving pieces.
  • Place flour,garlic salt, paprika and pepper in plastic or paper bag.
  • Shake liver in bag until well coated.
  • Melt shortening in 10-in. skillet. Add liver and brown quickly on both sides, about 5 minutes.
  • Remove meat to platter;keep warm while preparing Piquant Sauce.
  • Piquant Sauce.
  • 1 medium onion, sliced.
  • 1 tablespoon shortening.
  • 2/3 cup water.
  • 2 teaspoons cornstarch.

  • In same skillet, cook and stir onion in shortening until onion is crisp-tender, about 2 minutes.
  • Blend remaining ingredients;pour into skillet.

2 large onions chopped
3 clove garlic chopped
3 medium stalks celery chopped
2 medium green bell pepper chopped
in a cast-iron dutch-oven pot, saute the above till wilted
3-4 Tbsp flour added to above, cook until the roux is almost burnt add beer
1 bottle miller-light, stir
have your meat cooked & cut into bite-sized pieces
pour the meat juices & the meat over the veggies
simmer for 2hr with lid on
add salt & peppet & red-pepper flakes
uncover pot & let the juice thicken, serve over rice

  • 2. where the Sauce comes from, the meat sauce---- where the Pecan comes from hmmm--not so sure!! Daddy just always called it that---so we have too! LOL!!!

This recipe was found in a wonderful book called The Bluegrass Music Cookbook and was contributed by Marie Cox of the Cox Family, a Bluegrass music group from Cotton Valley, Louisiana. I've tweaked it only in very small ways from the original and lowered the oil substantially. The original recipe called for 1/2 cup cooking oil. If you're not worried about the fat content you could go with the original amount.

1 cup white onion, chopped
2 garlic cloves, chopped
2 tablespoons canola oil
1/2 cup celery, chopped
1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper
2 lbs shrimp, cleaned
1 slice lemon
1/4 cup green onion, finely chopped
1/4 cup parsley, finely chopped

Steps:

  • Saute the onion and garlic in the oil until lightly browned (preferably in a nonstick saucepan, otherwise you may need more oil).
  • Lower hear, cover and cook until tender.
  • Stir in the next 6 ingredients (celery to red pepper).
  • Simmer, uncovered, for 30 minutes, stirring continuously.
  • Add shrimp and lemon slice and cook until shrimp is tender.
  • Just before serving, add the green onions and parsley.
  • Serve over hot rice.

1 lb sliced beef liver
1/4 cup gold medal flour
1/2 teaspoon garlic salt
1/4 teaspoon paprika
1/8 teaspoon pepper
2 tablespoons shortening
1 medium onion, sliced
1 tablespoon shortening
2/3 cup water
2 teaspoons cornstarch
2 teaspoons soy sauce

Steps:

  • LIVER INSTRUCTIONS:.
  • Cut liver into serving pieces. Place flour, garlic salt, paprika and pepper in plastic or paper bag. Shake liver in bag until well coated.
  • Melt shortening in medium skillet. Brown liver quickly on both sides, about 5 minutes. Remove to warm platter; keep warm while preparing Piquant Sauce. Add liver to sauce; heat through.
  • PIQUANT SAUCE INSTRUCTIONS:.
  • In same skillet, cook and stir onion in shortening until onion is crisp-tender, about 2 minutes. Blend water, cornstarch, and soy sauce; pour into skillet. Cook, stirring constantly, until sauce thickens and boils. Boil and stir 1 minute.

2 tablespoons plain flour
1 1/2 cups chopped onions
1/2 cup chopped bell pepper
2 cups pork roast, cut bite size
1 cup water
1 can Rotel Tomatoes
1 (16 ounce) can crushed tomatoes
1/4 teaspoon cayenne pepper
salt and pepper
6 cups cooked rice

Steps:

  • Heat oil in a heavy sauce pot.
  • Add flour, cook stirring constantly until the color of copper.
  • Stir in onions and bell pepper, cook until tender.
  • Add roast, water, Ro-Tel, crushed tomatoes, cayenne,salt and pepper.
  • Stir to combine.
  • Cook on medium-low heat for 1 hour.
  • Serve over cooked rice.
