Time 1h20m

Yield 9 servings

Number Of Ingredients 5

12 ice cream sandwiches
1 pint strawberry ice cream, softened
1 pint chocolate cookies and cream ice cream, softened
One 8-ounce container whipped topping
1 cup mixed red, white and blue sprinkles

Steps:

  • Line the bottom and sides of an 8-inch square cake pan with two crisscrossed sheets of foil, leaving an overhang on each side.
  • Place a layer of ice cream sandwiches into the bottom of the dish, breaking them as necessary to cover as much of the pan as possible. Scoop the strawberry ice cream onto the sandwiches, then spread evenly with a spatula until the sandwich layer is covered. Add the remaining ice cream sandwiches on top to form another layer. Top with the cookies and cream ice cream and spread evenly. Spread the whipped topping over the top like a frosting, then top with the sprinkles. Freeze for 1 hour.

ICE CREAM LAYER CAKE

Time 4h15m

Yield 6 to 8 servings

Number Of Ingredients 7

1 pound cake
1 cup vanilla ice cream, slightly softened
4 large peanut butter cup candies, roughly chopped
1 cup chocolate ice cream, slightly softened
1/2 cup chocolate candies, such as M and Ms, roughly chopped
1 cup chocolate chip ice cream, slightly softened
Chocolate shell ice cream sauce (the type that hardens), such as Smucker's Magic Shell, for covering the top

Steps:

  • Slice the pound cake horizontally into 3 pieces. Place the first slice in a loaf tin lined with plastic wrap. Cover the cake with the vanilla ice cream, followed by three-quarters of the chopped peanut butter cups. Add a second layer of cake and cover with the chocolate ice cream, followed by three-quarters of the chocolate candies. Place the last layer of cake on top, followed by the chocolate chip ice cream. Cover with the chocolate shell sauce, then the remaining peanut butter cups and chocolate candies. Let the sauce set for a few seconds, then fold over the plastic wrap and place in the freezer until frozen, about 4 hours.
  • When ready to serve, pull back the plastic wrap, gently lift the cake out and peel off the wrapping completely. Slice to serve.

Tips:

  • Before assembling the cake, ensure that all components are completely chilled. This prevents the ice cream from melting too quickly.
  • If using store-bought cookies, choose a brand that is thick and sturdy enough to hold up to the weight of the ice cream.
  • To easily slice the cake, dip the knife in hot water and wipe it dry before each cut. This prevents the ice cream from sticking to the knife.
  • If you don't have a springform pan, you can use a regular 9-inch baking pan. Just be sure to line the pan with parchment paper before adding the ingredients.
  • You can decorate the cake with any type of toppings you like. Some popular options include whipped cream, chocolate chips, sprinkles, and fresh fruit.
