This recipe, crafted with expertise by Ree Drummond, the beloved culinary icon known for her down-to-earth cooking style, takes you on a culinary journey, promising a taste sensation that will linger in your memory.

Our journey begins with a selection of the finest salmon fillets, each boasting a rich orange hue and a texture that promises both tenderness and flakiness. These fillets are then seasoned with a zesty blend of herbs and spices, including garlic, dill, and paprika, creating an aromatic symphony that awakens the senses.

Next, we venture outdoors to the heart of the grilling experience. As the flames dance and the air fills with a smoky fragrance, the salmon fillets are carefully placed on the grill, where they sizzle and cook to perfection. The delicate flesh of the salmon gradually turns opaque, while the skin becomes beautifully charred, infusing the fish with an irresistible smoky flavor.

Accompanying the grilled salmon is a vibrant array of sides, each contributing its own unique charm to the overall composition. There's the refreshing simplicity of a lemon-herb sauce, with its bright citrus notes cutting through the richness of the salmon. Then comes the creamy indulgence of a homemade tartar sauce, adding a luscious dimension to each bite.

For those seeking a delightful crunch, a side of crispy roasted vegetables provides the perfect textural contrast. These vegetables, tossed with olive oil and sprinkled with herbs, emerge from the oven caramelized and bursting with natural sweetness.

To complete this culinary odyssey, we present a selection of flavorful grilled bread options. From the rustic charm of grilled sourdough to the airy elegance of grilled focaccia, these breads serve as the perfect canvas for the salmon and its accompaniments.

Indulge in the Pioneer Woman Grilled Salmon experience, where the freshness of the sea meets the warmth of the grill, creating a symphony of flavors that will transport you to a summer paradise.

Time 20m

Yield 4 servings

Number Of Ingredients 6

Four 6-ounce skinless salmon fillets
2 cups teriyaki sauce
1 tablespoon vegetable oil
2 limes
One 8.5-ounce pouch microwave jasmine rice
1/3 cup loosely packed fresh cilantro leaves

Steps:

  • Add the salmon to a shallow dish and pour the teriyaki sauce over the fillets. Using a pair of tongs, flip the fillets to coat them completely in the sauce.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the fillets to the skillet and cook on the first side for 5 minutes, being careful not to let them burn. Carefully flip the fillets and cook another 2 minutes on the second side. Remove to a plate and set aside.
  • Pour the remaining teriyaki sauce from the shallow dish into the hot skillet. Grate in the zest of 1/2 lime and allow the mixture to bubble and reduce for a few minutes. You do not want it to be super thick or sticky. Once reduced gently, nestle the salmon back into the skillet and spoon the sauce over top.
  • Microwave the pouch of rice according to the directions on the package. Pour the rice onto a serving platter.
  • Carefully transfer the salmon to the bed of rice. Spoon some sauce over top of the salmon and rice. Garnish the platter with the cilantro leaves. Cut the remaining lime into wedges and arrange along the edge of the platter for serving.

Time 30m

Yield 4 servings

Number Of Ingredients 16

3 large egg yolks
1 lemon, zested and juiced
1 cup (2 sticks) salted butter, melted and hot
1/2 teaspoon kosher salt
Pinch of freshly ground black pepper
1 tablespoon minced fresh chives
1 tablespoon minced fresh parsley
2 teaspoons minced fresh dill
1 bunch asparagus, trimmed
6 tablespoons salted butter, melted
Kosher salt and freshly ground black pepper
4 thick slices sourdough bread
1 tablespoon white vinegar
4 large eggs
8 ounces smoked salmon
Chopped chives, for serving

Steps:

  • Preheat a grill pan over medium heat. Bring a large pot of water to a simmer.
  • For the herby hollandaise: Add the egg yolks and lemon zest and juice to a blender and blend for about 10 seconds. With the blender running, slowly drizzle in the melted butter. Season with the salt and pepper. Transfer to a serving vessel and stir in the chives, parsley and dill.
  • For the bread and asparagus: Toss the asparagus with 2 tablespoons of the melted butter and season with a pinch of salt and pepper. Place on half of the grill pan and cook until charred, about 3 minutes. Brush the bread with the remaining melted butter and place on the other side of the grill pan. Grill the bread until nice grill marks form, about 1 minute per side. Set aside.
  • For the eggs: To poach the eggs, begin by adding the vinegar to the large pot of simmering water. Gently crack the eggs into the water and leave them alone for 2 to 2 1/2 minutes. Remove the eggs with a slotted spoon and set aside on a paper lined plate so that any water is soaked up.
  • To assemble, place a piece of bread on each of 4 plates and add a few slices of smoked salmon. Top with an egg, followed by some of the herby hollandaise. Serve with the grilled asparagus on the side and garnish with chives.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 small zucchini, trimmed and quartered lengthwise
3/4 red bell pepper, quartered
3/4 green bell pepper, quartered
1/2 bunch asparagus, ends trimmed
2 tablespoons olive oil
3/4 cup store-bought Greek vinaigrette
1/2 yellow onion, sliced into thick half-moons
Four 6-ounce skinless salmon fillets
1/2 cup crumbled feta
1/4 cup kalamata olives, roughly chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Put the zucchini, bell peppers and asparagus in a large bowl and toss with a scant 1 tablespoon of the olive oil and scant 1/4 cup of the vinaigrette, making sure everything is nice and coated. Transfer the coated veggies to the grill. Add the onions directly to the grill and give them a good brush with the vinaigrette and olive oil mixture. Grill, turning the veggies every 2 minutes, until tender and well-marked, about 8 minutes. Remove to a serving platter.
  • Pat the salmon dry with a paper towel. Reserve 2 tablespoons of the vinaigrette for serving, then brush the salmon on each side with 1/2 tablespoon of the remaining vinaigrette; drizzle on both sides with the remaining olive oil. Grill the salmon for 2 minutes, then rotate 45 degrees and cook for another 2 minutes. After 4 minutes total, flip the salmon and grill on the other side for 2 minutes, then rotate and cook for 2 minutes more. Brush with some of the remaining vinaigrette while cooking if needed.
  • Transfer the salmon to the serving platter with the vegetables. Drizzle everything with the reserved vinaigrette. Sprinkle over the feta, olives, and parsley. Serve immediately.

CILANTRO LIME SALMON

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 16m

Yield 2 servings

Number Of Ingredients 9

1 tablespoon vegetable oil
3 tablespoons butter
Two 6-ounce fillets salmon
Kosher salt and freshly ground black pepper
1 tablespoon honey
1 tablespoon soy sauce
Zest and juice of 2 limes, plus lime wedges, for serving
2 tablespoons finely chopped fresh cilantro
Steamed rice, for serving

Steps:

  • Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. Add the fish to the skillet and cook for 3 to 4 minutes per side, depending on the thickness of the fish and the degree of doneness you like. Remove from the skillet and keep warm.
  • Return the skillet to medium heat and add the honey, soy, remaining 2 tablespoons butter and half of the lime zest and juice. Cook, stirring, until the butter melts and starts to bubble. Cook for a minute until the sauce thickens a little. Add the salmon and spoon over the sauce. Cook for another minute, basting as you go. Sprinkle generously with the cilantro.
  • Stir the remaining lime juice and zest into the cooked rice. Serve the salmon with the rice, extra sauce and lime wedges on the side.

Tips:

  • Choose the freshest salmon you can find. Look for fish that is bright pink or orange in color, with firm flesh. Avoid salmon that is dull or has a slimy texture.
  • Use a good-quality olive oil. Extra virgin olive oil is the best choice, as it has a rich flavor and high smoke point.
  • Season the salmon generously with salt and pepper. This will help to enhance the flavor of the fish.
  • Cook the salmon over medium heat. This will help to prevent the fish from burning or overcooking.
  • Baste the salmon with melted butter or olive oil during cooking. This will help to keep the fish moist and flavorful.
  • Cook the salmon until it is cooked through. The flesh should be opaque and flaky, and the internal temperature should reach 145 degrees Fahrenheit.
  • Let the salmon rest for a few minutes before serving. This will help the juices to redistribute throughout the fish.

Conclusion:

Grilled salmon is a delicious and healthy meal that can be enjoyed by people of all ages. It is a good source of protein, omega-3 fatty acids, and vitamins and minerals. By following these tips, you can grill salmon perfectly every time.
