2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for serving
Chopped onions, for serving
Tortilla chips, for serving
Lime wedges, for serving

Steps:

  • Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
  • After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

1 cup grated Monterey Jack
1 cup grated pepper jack
1 teaspoon freshly ground black pepper

Steps:

1 sweet onion, chopped

3 tablespoons (1 1/2 palm fuls) dark chili powder
2 tablespoons (1 palm ful) cumin
2 tablespoons cayenne pepper sauce

1 cup beer or beef broth
1 (28-ounce) can diced tomatoes in juice
1 (14-ounce) can crushed tomatoes

1 1/2 pounds elbow macaroni
2 tablespoons olive oil
2 red onions, halved and thinly sliced
2 ears corn, shucked and kernels removed (about 1 1/2 cups)
Kosher salt and freshly ground black pepper
Two 4-ounce cans diced green chiles
6 tablespoons salted butter, plus more for the pan
1/3 cup all-purpose flour
3 cups whole milk
2/3 cup half-and-half
3 tablespoons adobo sauce from canned chipotles
1 cup cubed processed cheese, such as Velveeta
2 cups freshly grated Monterey Jack cheese
2 cups freshly grated pepper jack cheese
One 10-ounce can diced tomatoes and chiles, undrained
1 cup tortilla chips, crushed
Chili powder, for sprinkling
1/4 cup chopped fresh cilantro

Steps:

  • Bring a pot of water to a boil. Cook the macaroni in the boiling water until just undercooked. Drain and set aside.

Sprinkle the remaining 1 cup Monterey Jack and 1 cup pepper jack over the top. Sprinkle the crushed tortilla chips all over the cheese, then sprinkle with chili powder.
  • To bake immediately, preheat the oven to 375 degrees F. Bake until bubbly and hot, 20 to 25 minutes. Sprinkle over the chopped cilantro and serve.
  • To freeze the casserole for later, let cool completely, then cover with aluminum foil, fold over the edges to seal and freeze.
  • If cooking from frozen, preheat the oven to 375 degrees F.
