DUMPLINGS:
1-1/4 cups all-purpose flour
1/2 cup sugar

caramel syrup
3/4 cup sugar
2 1/2 cups hot water
3/4 cup sugar
1 tablespoon margarine
1 teaspoon vanilla
1/4 teaspoon salt
dumplings
1 cup flour
2 tablespoons margarine
2 teaspoons baking powder
2 tablespoons sugar
1/3 cup milk
1 pinch salt
1/3 cup chopped nuts (optional)

Steps:

  • Part One:
  • In a heavy skillet - Melt 3/4 Cup sugar until amber just put sugar in the pan and turn on heat to medium, sugar will melt and turn amber - it burns quickly so stir constantly). As soon as the sugar is melted, turn off the heat and add hot water. Turn the heat back up and boil slowly until the sugar agin disolves. Add 3/4 Cup sugar, Margarine and salt. Stir until disolved. Remove from heat and add vanilla.
  • Part Two:.
  • Work Margarine into the flour. Add salt sugar and backing powder. Mix until it becomes a crumbly mixture. Add milk until moistened. Add optional nuts if desired. Dumplings shouldn't be too sticky or too dry. Roll dumplings into balls just smaller than a golf ball.
  • Reheat the syrup to a slow boil. Add the dumplings one at a time using a spoon. Turn down heat, cover and cook for 10 minutes. Once cooked remove from heat, remove cover and let stand for 5 minutes.

1 egg, lightly beaten
1 teaspoon water

Pioneers didn't have much, but what they did have they made the best of. This is a cross between dumplings and noodles, uses only 4 ingredients and is a great comfort food. We have never modified it from the original recipe which has been passed in our family I think forever.

This is my favourite dessert to make! I think it's from a Women's Weekly cookbook of the early 80s. I don't use the salt, but leaving it there as it's part of the original recipe. Perfect in the cold weather but I love them any time but in the worst heat of summer. They're fantastic on their own but can be served with ice cream. If I'm having a craving and have no brown sugar I'll use white sugar - not quite the same but when you have a craving it's almost perfect.

Found this on Diana's Desserts, 2003 Diana Baker Woodall posted in February of that year. The sauce can be made up to 3 weeks ahead, chill in airtight container and the dumplings can be made up to 1 day ahead - chill sauce, dumpling and egg mixture separately in airtight container. Just bake chilled dumplings as directed.

2/3 cup sugar
1 cup whipping cream
1 teaspoon vanilla
3 tablespoons rum (optional)
chopped nuts (optional)
4 medium baking apples (Granny Smith or Golden Delicious apples are good choices.)
1 tablespoon fresh lemon juice
1/2 sheet frozen puff pastry (17.3oz pkg)
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)
1 large egg, beaten with
1 teaspoon water

Steps:

  • Make Caramel Sauce.
  • Peel apples, core each, creating a 1" wide hollow from top to bottom.
  • Place apples in a bowl and coat with lemon juice.
  • On a lightly floured board, roll pastry into a 12" square.
  • Cut into four equal squares and center an apple upright on each.
  • Pour Caramel Sauce equally into apple hollows.
  • Add chopped nuts at this time, if using.
  • Brush egg/water mixture over 1/2" wide border around each pastry.
  • To wrap each dumpling, with floured finger bring two opposite pastry corners up over apple and pinch tips together. Repeat with remaining two corners.
  • Firmly pinch all tips together; pinch each seam, then fold over about 1/8" along the seam and pinch again, leaving no holes.
  • Space evenly on a buttered 12x15" baking sheet.
  • Bake at 375F for 20 minutes.
  • Bake until pastry is deep golden, 10-15 minutes longer.
  • With a wide spatula, transfer the dumplings to plates.
  • Accompany with remaining caramel sauce and ice cream, if desired.
  • Caramel Sauce:.
  • In a 2-3 quart pan over medium heat, tilt and swirl sugar often until melted and amber-colored. About 5-7 minutes.
  • Stir in whipping cream; mixture will bubble and sugar will harden.
  • Stir until sugar melts again and sauce boils, 6-8 minutes.
  • At once, pour sauce into a bowl.
  • Stir in vanilla.
  • Let sauce cool for 10 minutes, then stir in the rum.
  • Serve warm or cool.
