PINTO BEANS WITH MEXICAN-STYLE SEASONINGS

Pinto Beans With Mexican-Style Seasonings image

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

HOW TO MAKE A SIMPLE POT OF ANASAZI BEANS

How to Make a Simple Pot of Anasazi Beans image

A piece of ham, a ham hock, or bacon can be added to the beans, but they are delicious without meat. If the beans need thickening, mash a cupful and put them back in the saucepan. To make frijoles refritos (refried beans), mash all of the beans by hand or in a processor and fry them in vegetable oil in small batches. PINTO OR ANASAZI BEANS

Pinto or Anasazi Beans image

There's nothing like a good ole pot of red beans with some yummy hot cornbread. NOTE: to reduce the fat, omit ham hock or salt pork/bacon.

Provided by Lynn Socko

Categories     Other Side Dishes

Time 12h

Number Of Ingredients 10

16 oz bag of pinto or anasazi beans
smoke ham hock or leftover ham bone
1 tsp cumin, opt
2 Tbsp chili powder
2 clove garlic, peeled
1 whole jalapeno, opt
OR
1/4 c pinto seasoning
2 clove garlic
1 whole jalapeno

Steps:

  • 1. I found these recently at a local store and decided to try them, they are similar in taste to pinto but with a milder "bean" flavor. They are really outstanding and my new go to bean!
  • 2. NOTE: This is a crockpot recipe. These can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer.Ham hocks can usually be found in the section of your store where the whole hams are sold. If not using ham hocks, salt pork or bacon, but the ham hocks give you more flavor!
  • 3. Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight. May need to reseason with a tsp of cumin, chili pwd. or salt after cooking.
  • 4. Use these beans for this too: https://www.justapinch.com/recipes/side/vegetable/unfried-refried-beans-no-fat-low-sodium.html?p=2

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce the cooking time. You can also soak the beans for a shorter period of time, such as 4-6 hours, but the longer you soak them, the better the results will be.
  • Use a variety of beans: If you don't have pinto or Anasazi beans on hand, you can use other types of beans, such as black beans, kidney beans, or navy beans. Just be sure to adjust the cooking time accordingly.
  • Add flavorings: You can add a variety of flavorings to your beans, such as garlic, onion, cumin, chili powder, or oregano. You can also add vegetables, such as tomatoes, peppers, or corn.
  • Cook the beans until they are tender: The cooking time for beans will vary depending on the type of beans and the method of cooking. Be sure to cook the beans until they are tender but not mushy.
  • Serve the beans hot or cold: Beans can be served hot or cold. Hot beans can be served as a main course or a side dish. Cold beans can be used in salads, sandwiches, or wraps.

Conclusion:

Pinto and Anasazi beans are two delicious and versatile beans that can be used in a variety of dishes. They are a good source of protein, fiber, and other nutrients. With a little planning, you can easily cook and enjoy these beans at home.
