SOUTHERN PINTO BEANS

Provided by Stacey Little | Southern Bite

Categories     Side Dish

Number Of Ingredients 6

1 pound dried pinto beans
8 cups water
1 smoked ham hock (or substitute - see notes)
3 chicken bouillon cubes
1 medium onion, chopped
salt

Steps:

  • Inspect the beans to remove any small rocks or debris. Rinse well.
  • Place the beans, 8 cups of water, ham hock, bouillion cubes, and chopped onion in a large pot with a lid. Bring to a boil, then reduce the heat to a simmer. Add salt to taste. I usually add about 1 teaspoon, but the exact amount of salt needed will vary based on the sodium level in the brand of bouillon and your taste.
  • Cook over medium low for 1 1/2 to 2 hours or until tender to your liking. Remove the ham hock, shred the meat, and return it to the pot, if desired.

SPICY BEAN TURNOVERS (WITH VARIATIONS)

Spicy Bean Turnovers (With Variations) image

Our family loves these little 'mock hotpockets' and they come together really quickly. Add a side of salsa & fat-free sour cream for an easy, healthy lunch, or serve as an appetizer. There are many variations for these and they would be great for a lunchbox. These can be baked, then frozen, and reheated in the microwave. Adapted from an idea I saw in Quick Cooking that called for a can of bean dip in place of the bean mixture I use.

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS

Pinto Beans With Mexican-Style Seasonings image

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

SLOW-COOKER PINTO BEANS

Slow-Cooker Pinto Beans image

If you have yet to cook beans from scratch and own a slow cooker, this is the recipe for you! It comes together with pantry ingredients, requires minimal prep and thanks to the slow cooker, you'll be rewarded with plump, perfectly tender beans with almost zero hands-on time. (Navy beans would also work well here.) Seasoned with warm spices and pickled jalapenos, they are a great side dish. Or serve them over rice or with warm tortillas as a meal.

PINTO BEAN PIE

Pinto Bean Pie image

Gammy (as my mom, Barbara Galloway, is known around here) loves to cook and be creative. It's a trait that was passed down from her father. Pinto Bean Pie is one of her favorite recipes to make, especially when she's planning special holiday meals. If you'd like to dress up each slice, top them with a dollop of whipped cream and a pecan. -Valerie Elijah, Dayton, Ohio

Tips:

- To save time, use canned or pre-cooked beans instead of dried. - Make sure the bean mixture is cool before adding it to the pastry dough. Otherwise, the dough will become too soft and difficult to work with. - If you don't have a rolling pin, you can use a wine bottle to roll out the dough. - To make the turnovers easier to seal, brush the edges of the dough with a little water before folding them over. - For a crispy crust, brush the turnovers with milk or an egg wash before baking. - The turnovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to 2 months.

Conclusion:

Pinto bean turnovers are a delicious and easy-to-make appetizer or snack. They're perfect for potlucks, parties, or a quick lunch.
